So I have discovered the Pesto stuffed Mushrooms---LOVE ThEM... :D Then I got gutsy & used the rest in scooped out zuchinni boats-dehydrated (about an inch long- awesome. So when I was making another batch today...I thought, I want to make a pesto dip-lower in fat, etc. So here it is
1/2 of Alissa's Pesto recipe ( I used only 1/2 the olive oil)
2/3 Bag organic washed spinach
couple squeezes of lemon, maybe 2 tblsp.
& "to kick it up a notch...a dash or more of cayenne...oh yeah ...baby" :D
Came out great...had it with carrots/celery sticks at lunch, but, can do crackers, w/nut burgers, etc. :p
