Thanks! :D I havn't posted the recipe anywhere yet because I am not sure of the amounts! I was playing around when I made it. I just chopped the eggplant into chunks and added chopped red peppers (the zuchini did not go as well) and mixed the sauce in then dehydrated it long enough to all soak in and get warm & soft.
The sauce is a peanut teryaki sauce I use for other things too. It's tomato, peanuts, red pepper, ginger, garlic, cilantro, sea salt, nama shoyu, lime juice, agave, apple cider vinegar.. I forget what else now, I will post the recipe more exact when I make it again!

RVM- Did you sweat the eggplant first? I have had bitter eggplant in the past until someone told me about using salt to allow the eggplant to sweat the bitterness away.
Eggplant is on sale right now at my Co-op and I may try your recipe. Even though you don't have exact measurements I will swing it.

Wow I never heard of that! I don't think i've ever had a bad eggplant though- I love them! Or maybe I just don't notice? I love bitter foods :D
