i know there are no stupid questions, but i feel as if these might be a little dopey -- or betray some kind of vegetable-prep ignorance! can you guys help me figure out if these veggies, commonly found in good (like at natural food stores) salad bars are raw or cooked?
- beets (either round or chunks, fairly soft)
- hearts of palm
- artichoke hearts (in water, not oil)
- straw mushrooms
- water chestnut slices
- baby corn
- marinated mushrooms (when the marinade ingredients check out ok)
- bamboo shoots
any other ambiguous salad bar items you can think of?
thanks!

Your best bet would be to ask the people who work there and prepare the veggies. Some vegetables that seem to have a "cooked" texture can actually be raw if marinated for awhile. And some stuff that seems raw could be cooked.

someone please correct me if i am wrong but,,,
if these are on a salad bar they most likely came from cans or jars, and have been either treated with preservatives or heated, and therefore are not considered raw. you could double check with the people preparing it though. i would stick to the carrots, cucumbers, tomatoes, cabbage, things you KNOW are raw.

these are all NOT raw, as Blue sky said, they are from a jar or can.
also the eggs, olives, sunflower seeds, croutons, pineapple, peppercinies, jalepenos, peaches, pears and cheese are not raw.
Usually anything salty, or in vinegar or soft is NOT raw.
But, you can eat the different lettuces, tomatoes, carrots, celery, apples, and cauliflower.

Now, some pineapple and other fruits may be raw...guess it depends on where your salad bar is....if it is in a health food store it very well may be. The best thing to do is ask the store/restaurant!
Good Luck!
