Hi,

I have been getting lots of zucchini, patty pan, and yellow squash from my CSA share this summer and wonder if any of you have any good raw recipes to share with me so none of my squash goes to waste? Thanks so much!!

Well, the zucchini for the Angel Hair "pasta", the rest, I'm not sure...others will pipe in I'm betting.

Pumkin pie {I am grateful cookbook}
Crust:
2 1/2 c pecans
1/4 c packed chopped dates
1/4 t vanilla
1/8 t salt

(process & press into greased pie tin)

Pie:
3 c shredded butternut squash
1 1/2 c coconut milk (young coconut meat & water blended)
1/4 c + 2T agave
1 T vanilla
2 pinch salt
2 t ginger powder
2 t cinnamon (add more!)
1/2 t nutmeg
1/8 t clove
pinch tumeric

2 T lecithin*
1/2 c + 2T coconut butter (uncented)*

Process pie ingredients - add * last. Pour in shell refrigerate 45 min then garnish with 1/2 c pecans.

Oh duh me! I've taken squash and cut about 1/4 inch thick, sprinkled LIGHTLY with Herbamare and dehydrated into zuch chips. The yellow squash would work too - also to make the crackers.

I dehydrated some yellow squash chips, and they were really good! I seasoned them just a bit.

I tried spiralizing yellow squash, and it doesn't do as well as zucchini.

Wonder if you could do Patty Pan "bacon"??? Use the same marinade as for the eggplant then dehydrate. Bet that would work!
