I'm really missing Indian/Thai food, and I'm looking for a raw curry recipe. Please post your favorites...

Enjoy & hope this helps. My green curry paste makes it BIG TIME HOT, but I love it!:D

Alissa's indian dip is amazing. I just had it for lunch too.
4 cups Spinach
1 Avocado
lemon juice
fresh ginger
then spices to taste: I used curry powder, garam marsala, cumin, sea salt, cayenne, chili powder.

Oooh that sounds amazing and I have all the ingredients. I'm definitely trying this!

oops, forgot... I added 1 small clove of garlic to that and blended everything in my FP. By the time I was done blending it was very slightly warm. That together with the spices makes it almost feel like a hot dish - lovely!

I made this last night, it was a pretty bang-on Thai Coconut Green Curry sauce which I poured over shredded red cabbage, mung bean sprouts, fresh basil leaves, spinach leaves and some other vegetables..

*IDEALLY would be young coconut meat and water blended to make coconut milk, but I only had dried shredded coconut flakes...

2/3 C dried shredded coconut, ground to powder in coffee grinder
mixed with about 2/3 C warm water
Blend smooth with:
1 " piece of jalapeno or other chile
2 " piece of fresh ginger
2 cloves garlic
1 T powdered dried lemongrass *pretty essential flavour wise.. fresh would most likely work as well
3-4 T tamari
1 capful apple cider vinegar
juice of 1/2 lime
a few fresh basil and/or mint leaves (optional)

At this point, just keep tasting and adding as needed. You may need more water, more tamari, more ginger or jalapeno/chile... or a date for sweetness if it's too crazy... more lime juice.. etc..

yep that sweetpotato curry is good, i use it lots :)
i have also used whatever veggies i have and mixed up a curry paste with similar ingredients here, or added a avocado to make it creamy and mixed that into the veggies.
sometimes its just good to experiment :)

I made this today and it's really good. It's milder, the curry doesn't take over the taste of everything else:)

2 red peppers
1/2 red onion
1 apple
1 avocado
1 C cashews or pine nuts (I used cashews)
1 clove garlic
2Tbl basil
3 Tbl curry powder
pinch of salt

Just chop up everything and throw it in the blender.
