This is a continuation of the previous thread located here:

That one was getting a little too long. So, here is a new one so you can continue to show us your creativity with recipes and photos.

Here's how it works (or how we'd LIKE it to work! :) )

We'd like to keep this thread for photos of recipes only. The reason being is so that we can all enjoy drooling over the beautiful creations of our members without having to scroll through pages and pages of posts giving kudos, saying how good it looks or asking for the recipe. However, we ALL like having that little pat on the back as it feels good to get praise, so IF YOU CAN...if at ALL possible, please try and post a photo of a food creation along with your kudos, etc. BUT... if you really wanna say something or ask something and it's not feasible for you to post a photo of one of your raw dishes, then we won't slap your hand for posting comments, feel free to do so - we just don't want to bombard the thread with more comments than photos, that's all! :)

With this in mind, please:

1) Those of you posting photos of your dishes, if it's your creation and you WANT to include to recipe, do so with your photo so that people can share in making it too!

2) If the recipe is not your own, you can cite the source of it, (i.e. "Living on Live Food" by Alissa Cohen, page ---) Now, use YOUR discretion with posting recipes from other books without the author's permission.

I'll start the ball rolling with my snack for the night!

Dish - "Hot" Fudge Sundae with chopped pecans and strawberries

Recipe - I don't generally do measurements, but the "hot" fudge I got from a recipe that was posted here (I'll find the exact recipe source so I can give credit where it's due) 1 TB. cacao powder, 1 TB. coconut oil, 1/2 tsp. vanilla, 1 TB. agave and I added a little bit of cashews and water and maybe a bit more agave. Mix in a bowl until no more lumps are present...but I blended in my Vitamix to kinda "warm" it a bit (almost burnt out my motor too!)

Ice Cream - I had previously blended in the blender about 1 c. cashews and 2 c. water, vanilla (maybe a couple of teaspoons), agave to taste and a little sea salt. I then froze this mixture in ice cube trays then when frozen, plopped out into ziploc bags to store. So, I added some of the cubes and about 1 frozen banana to my food processor and whipped it up until ice cream consistency.

This is my third attempt at RAW but this time i stuck:)
Now i crave raw food and i love it, love it, love it.
Thank you so much, for creating your beautiful sundae, it's good for breakfast, lunch and dinner:D
With the picture and recipe postings it is helping my hubby to go more raw and i can't thank you enough.
He's much healither now and his blood pressure is not an issue anymore, i can't wait for him to go back to the Doctor so he can get off the pills.
The Doctor told him he is sodium sensitive so i will start making him more green smoothies in the morning before he goes to work.

Hey Bud!

Yeah, it's okay now HOWEVER...it would be nice if these food pic threads could have more pics than comments so-oooo...I'm asking that if it's at all possible, at least contribute every so often with some pics if ya can! But it's cool if you can't and you still wanna say, "Hey, that looks good enough to eat!" or something like that :rolleyes:

I assume that was kind of indirectly aimed at me... Anyway, I hate to look through these wonderful creations and not compliment the people who put all their time and effort into creating such beautiful things. :)

I totally respect that people want to do comments in the new photo thread but, couldn't we just have a photo/recipes only thread again? I just get really excited when I see a new post for photos and its only a comment!

Yeah, I have to agree about people not posting without photos. This is the only thread that I ALWAYS check if there are new posts, because it is so fun to look at. I know sometimes you want to find a recipe, or you just have to say that something looks great, but maybe in that case you could find a picture of something from another website or from way back in the photo threads (giving credit for either, of course). The fun thing about this thread is that it requires creativity, so for those who want to comment, pull yours out and make this an active, interesting thread!

I figured I'd post a picture of a summer farmer's market bounty, all ready to eat. I might have posted this last year but oh well. I still think it's nice to look at.

Hi all,

Yeah, I was kinda torn between leaving the recipe/photo threads as photos ONLY or to allow the occasional comment with no photos. As you can see, there are mixed feelings on this. We tried, in the past, to do a separate thread for comments because even back then when one of our members first got the idea to do these picture threads with no comments, some members voiced that they LIKED having the comments and pats on the back while others said they liked the idea of no comments so we wouldn't have to scroll pages down to see actual photos due to the flood of comments.

It WOULD be very nice, though, if those of you who DO have photos of dishes you've made (even if they're OLD ones that you may have even posted a long while back - there are new people who may like to see them!) stored on your computer that you post a picture along with your comment rather than merely comment...just so we have more photos and not more comments than photos. But again, if you don't have a digi-cam or other ways to post photos or don't know how to do it or don't know how to upload pics to your computer, etc. then we don't wanna leave you out from commenting from time-to-time.

So, I'm gonna still make it so that folks can comment without pics but I'm gonna continue to request that IF YOU CAN...PLEASE post a photo along with your comment. Just start taking pics of your creations even if you don't plan to post right away and that way, they're stored on your computer so you can post them at some point or another.

Having said that, enough of the chitter-chatter...let's get some more PICTURES! :D

Here's a couple - The "Just like Ritz Crackers" (recipe posted in this forum) and Alissa's Rye Bagels and a slice of rye "bread" with almond butter and agave on top...

(P.S. Hi Fairygirl! :) How many photos did you attempt to post at once? I think there is a limit as to how many images per post that you can have (this even includes smilies) and so if you had over the capacity, that is more than likely why you got that message. Try uploading maybe 1-3 and see what happens.)

The last couple of days I've made some yummy raw desserts.
The first one is a version on Ani Phyo's Donut Holes...instead of dried pineapple I used dried cherries and goji berries and added a little bit of brazil nuts and pecans because I didn't have one full couple of soaked and dehydrated almonds.

The second one is Alissa's Date Nut Torte. I made it today for my friend's 1st b-day party. Of course there was lots of SAD desserts, but at least I made my own yummy raw one! This was the first time I made it and I now know I would like more raspberries on top or make a raspberry sauce to go on top of it.

The third one is Alissa's Macadamia Fudge Cookie but I dehydrated them first, then added shredded coconut and cacao nibs...yummy!!!!!

Like Stasher, I just made the donut holes too (recipe link a couple of posts up ^^) and I made it too the letter EXCEPT, when I tasted it, I thought the flavors went together really well and it's delicious, but something was missing. Sprinkled a little nutmeg on them and now they're perfect! Tastes even more like those little Hostess Crunch Donettes I used to love to eat! :D

Had burgers with cheese, barbecue sauce, mustard (not raw) and pickles (not raw) all on a lettuce "bun." These were so incredibly just like the real deal it was weird. We all looked surprised when we had our first bite.:eek: A new favorite in our house.
The recipe for the "meat" is Alissa's meatloaf recipe (with some of my own modifications like spices, smoke flavor, nama shoyu, little sweetener to balance the flavors, etc) made into patties. The barbecue sauce is also Alissa's with some more of my own little modifications. It was not my favorite but my husband loved it. The cheese is the rich cheesy sauce somewhere on this board. For hubby's, I marinated some shrooms and onions and put in the dehydrator while the patties were in there.

These were truly one of the most awesome things I have had!

Wow! Looks delicious! I haven't made Alissa's meatloaf (also into burgers) in a long time...I may have to revisit this recipe one of these days.

Here are a few things I made this week: Crispy/crunchy nori chips, an attempt at batter-"fried" onion rings (these turned out "okay" but I need to make some adjustments and modifications, and onion bread.

Maaannn...I got all excited when I saw your name in this thread thinkin' YOU had gotten a camera and posted a pic! :mad:

But no, it's not in there...it's my own. I don't measure but basically it's nori sheets cut into squares and then dipped (but not marinated) in olive oil, nama shoyu and a little water and from there, you can add any seasoning you desire. I did sea salt and black pepper. Then, they are dehydrated to crispness on the teflex sheets (using the sheets keeps them flat...on the mesh they curl up. My daughter likes cayenne on hers. To me, they're the perfect replacement for potato chips as they have the thin, crispy-crunch and the salty-oiliness.

Soooo here is another one for ya guys. I call it *Purple Passion*...It was my first try at Green Smoothies....however it came out purple. :p

It has bananas, spinach, blueberries, cherries, strawberries and fresh orange juice. Yummm!

1.) Raw eggless spread (with a few modifications such as diced avocado, a little agave, dill relish and diced - not raw, I know - and diced celery...also with a little paprika sprinkled on top) on onion bread (crackers...dried 'em longer for crackers) - SO good! and 2.) Oatmeal cookies

I don't usually make recipies, but I have been lately and my body can tell :( ANYWAY, here are chips and onion rings. I've never had SAD onion rings in my life so I'm not sure what to compare them to. I didn't dehydrate these enough. The onions became sweet, but still chewy. The chips weren't crisp, but more like crunchy. Maybe I needed to slice them thinner.

I have not been raw the past few months, but looking at all this makes me wanna dive in more again and add more raw back in my diet. That deviled eggless salad with the avocado looks especially enticing..

This is something i made the other day after me and my boyfriend went blackberry picking along a trail.

It turned out very tasty. I made it with fresh picked blackberries, a scoop of raw cacao powder, nut mylk, a handful of soaked dehydrated chopped almonds i had lyinging around, and I threw in some cacao nibs.

Hey Fellow Posters & Mods!

I guess I am entitled to a comment w/o picture so it goes. . .I must be gettin old because I find it really hard to properly see the pictures that are thumbnails - even when I double click on it. I LOVE seein the food pictures in the biggy size; you know all the gooey detail.

So how does one go about posting them a "bit" bigger, I see some are some are not??:o Is it possible to have the "double click" photo come up bigger??

I guess I am entitled to a comment w/o picture so it goes. . .I must be gettin old because I find it really hard to properly see the pictures that are thumbnails - even when I double click on it. I LOVE seein the food pictures in the biggy size; you know all the gooey detail.

So how does one go about posting them a "bit" bigger, I see some are some are not??:o Is it possible to have the "double click" photo come up bigger??

OK, I FINALLY made ice cream from the book : Vice Cream. This book specializes in vegan and raw vegan ice creams. I chose the chocolate and am very very pleased.

The taste is very rich and the consistancy here is key like a very firm soft serve even after storing in the freezer overnight after processing it in the ice cream maker. Had I known it was this easy I would have done it a long time ago. So often after you store your dessert in the freezer it is like ice blocks that you then have to reprocess in the food processor to make soft enough!

I was a bit wary as my first attemp at ice cream was from RFRW and while it was amazing I am not a fan of the tase of young coconut meat and its a bit labour intensive to make.

My next goal is to duplicate Ben & Jerry's Cherry Garcia. Someone posted a mouth watering picture here of their version with no recipe but I shall give it a go - does anyone have that recipe??:o

This was soooo yummy that I had to share it with you...

I had sliced Roma tomatoes, a variety of home grown sprouts (I just started growing them), button mushrooms with Eggless Egg Salad, Just like Ritz crackers and Homegrown Basil drizzled with olive oil & lemon juice. It was soooooo yummy! I really love the sprouts & I have been reading that they are very healthy. I was buying them...but I decided to buy the Easygreen (http://easygreen.com) sprouter. It is awesome!!! My goal is too eat a tray of sprouts every day.

Farmers' markey bounty!!

I don't know what the green and purple stuff on top is, but it looked so good(I actually got this at an Asian market after my farmers' market trip) and was such a good price that I got some! I just had some with watermelon juice and it's pretty good!
I also got some cactus fruit! It's buried under something in the picture. I'm really excited to give it a try!
Cukes were 3 for $1, so I bought 9!!! :D
Also *thumbs up* heirloom zebra tomtatoes for $1 a pound!!

These are dry, crisp, salty, sweet and deelicious.

You can use agave, honey or maple for the sweetner by in my experience the only one that gets dry and crisp is the maple, the others remain sticky. 2 cups uses only 2T. of sweetner so not so bad.

Dinner last night was mixed greens, grape tomatoes, cucumber spears, and spicy walnut meat. I made it from a recipe here and then added 1 cup mushroom slices and 1 cup grape tomatoes to thin the spice some. It was good and my daughter loved it.

Loosely based on Sarma's Spicy Peanut Coconut Noodles (http://gliving.tv/greenchefs/sarma/Spicy-Peanut-Coconut-Noodles/index.php)... served on marinated, wilted greens (kale, baby bokchoy, yu choy, cilantro, basil and arugula) with dehydrated red bell pepper strips and chili peanuts :D It was VERY VERY tasty!

This was my first go at young coconut noodles and it is well worth the effort for a hearty, completely non-raw seeming meal! I used 2 coconuts and only the first one offered decent meat for noodling, and this was just enough for 2 servings -- with 3 or 4 times as many greens underneath to make up for smallish portion of noodles.

And I have now conquered a thai coconut curry cooked craving with this recipe for sure ;)

(couldn't decide which foto offered a more enticing view so you get two.)

Yesterday hubby had a Mexican Meal and it set up some very strong cravings. So I decided the quickest, easiest, most satisfying thing to do with what I had was make potato chips. (After adding chili powder and cumin to the lime ice cream I was eating. It was actually good!) SO here they are; potato chips and experimental potato bread - which is actually closer to bread than the recipies I've tried.

Potato Chips
2 potatoes - sliced thin - dredge in the following piling the slices to one side in the bowl (I used a pie plate):

1 lemon - juiced
1 t pink salt
olive oil - maybe 2 TThis will leave water and starch drawn from the potatoes in the bowl. If after finishing the pile, the slices are not getting somewhat limp they can be massaged.

Potato Bread
2 potatoes cut up and blended with the liquid left from making chips, then strained through nutmilk bag. (just left it hanging over the bowl until fairly dough like) I did not add anything to this experiment. Since it turned out tasting good I may add something next time. Really though sad bread just tasted pretty plain. It was the filling that made the sandwiches.

Crunchy Veggie patties

6-8 servings

This is a very flexible recipe. I came up with this today and loved it!

Ingredients
1 sweet onion, chopped
1 zuchinni, chopped
1 cup carrot pulp
⅓ cup tahini
¼ cup cilantro
⅓ cup ground flax seed
1 red bell pepper, chopped
1 cup sunflower seeds
sea salt, to taste
1 teaspoon cayenne
1 lemon , juiced
garlic, to taste
2 tablespoons olive oil
Preparation
Throw all ingredients in a food processer until well blended but still very chunky. Form into patties and dehydrate at 105 until your desired consistency or refrigerate for a few minutes before serving. I just slopped it right out of the food processor onto my sandwich. Great served with fresh tomato slices, sprouts, etc

peach ice cream is

peaches, cashews, water, celtic sea salt and 1/2 inch vanilla bean.
*just play around with the quantities. we make up big quantities for our juice bar and then run it through the soft serve machine.

The crust crumbled on top of the ice cream is:

soaked then dried almonds & walnuts
processed with "s" blade in the food processor with dates and raisins and pinch of celtic sea salt.
I don't have measurements for this either..just throw them in till they get to the consistancy that you want. I like to run the nuts first to get them all ground up then add the dates/raisins a few at a time.

The Vanilla Sauce is a frosting that we use on our carrot cake. Although I think that picture is the frosting from the strawberry cheesecake.

And as for the cake...

it's Alissa's carrot cake from her book. I did a search and used rawlinlocs ideas for making it less mushy and how to make it into a layered cake. Here is the link for that info..

Frosting:
3 TBS. honey or agave (or more to taste)
3 TBS. orange juice or lemon (for more of a “cream cheese-type” frosting) – Add more if needed to make it smoother or more of an icing to drizzle
1 c. cashews (I prefer soaking them)
Dash of sea salt
¼ - ½ tsp. vanilla. (I use a 1/4 to 1/2 vanilla bean)

we add some orange zest to the frosting for a gourmet taste.

Hope she don't mind me postin' but it's a damm good recipe. :D

Creamy Jalepeno sushi


serves 3

This was my attempt at a cream cheese and chive roll but man it came out way better!

Ingredients
1½ cups pine nuts
1 tablespoon apple cider vinegar
1 tablespoon honey or agave
1 tablespoon lemon juice
2 cloves garlic, minced
1 tablespoon olive oil
2 drops sesame oil
1 tablespoon coarse sea salt
1 tablespoon noma shoyu
1 avocado
2 jalepeno, minced
½ cup green onion, minced
½ cup cilantro
nori sheets
1 cucumber
Preparation
Throw the pinenuts and garlic in the food processor until fine. Mix the rest of the ingredients in a bowl. Slice the cucumber to make tiny strips. Spread and roll!

I kind of adapted the recipe from a few others I found online...here's what I did: (the measurements might not be perfect)

*Crust:
2 C pecans (or walnuts)
8 medjool dates
1/4 C agave nectar
dried/shredded coconut

-Put nuts, dates, agave, and about 2 Tblsp coconut in food processor until consistently mixed
-spread a little agave on a cake pan to make it sticky and sprinkle coconut on as a first layer...then spread the rest on to make a crust..I ended up using my hands because it was easier
-stick that in the freezer while you make the "cheesecake" part

*Cheesecake:
Juice from 4 lemons
1/4C agave
3 cups SOAKED cashews (soak for about 40 mins)
1/4C coconut oil (try to use the liquid form)
add a banana for extra creamy texture

-blend all of that together, it should be pretty thick
-spoon it onto the crust until it's level and then FREEZE the heck out of it :D
...the coconut oil is key to making it solidify in the freezer
-I froze it overnight and it was ready the next day

*I also made a syrup for a topping!
use frozen raspberries, a few soaked dates, and agave
-blend to your desired consistency..use more dates for a jelly-like topping or add a little water to make it thinner

I put these into a meat loaf pan to shape the "bread" and then I popped it out and cut it up in slices. My picture looks like sausages lol but its more of a biscotti lookin shape. It was the best Moi could do.

I made Vanessa Sherwood's White Chocolate Cheesecake recently. It was so good! It tasted just like regular cheesecake. This is a great recipe to use up the cacao butter that Alissa sells.

This would be my first pick so far to give to non raw people.

LOL - The recipes I've shown, the guacamole and the zucchini are from Alissa's book - I'm not sure if it's okay to post the recipes here. But the first item is guacamole on a Portabella mushroom with a little Braggs, and the other dish is angel hair pasta made from zucchini made with a spiral slicer, and raw sauce made in the food processor.

I used other recipes as a guideline and sort of made up the rest! I made the crust with nuts, vegetables, olive oil, salt, and pepper. Then used Alissa's calzone cheese and nacho cheese blended together with some variations as a filling. I used cashew cheese blended with lemon juice, pepper, and spinach for the spinach layer.

Whew! I have been away and have a bunch of stuff to post but my daughter wanted me to post this first.

I made this torte with leftover chocolate pudding, left over crumble, leftover chocolate sauce and two remaining bananas!

I keep several differant crumbles on hand. I make up a batch then dehydrate it and pop it in a glass jar - it keeps forever!

The measurements are VERY approx.:rolleyes: !

Pudding: 1 avocado, 5 dates, vanilla, 2T. agave, 2-4 t. cocoa powder, salt

Crumble: pecans, dates, vanilla, salt

Chocolate sauce: (equal portions of both oils) coconut butter, cocoa butter, agave, cocoa powder, salt

I poped this in the freezer as it makes a great "ice cream" pie and is much easier to cut. Freezing also seems to remove any bitter taste from the avocado pudding.

My first pic post :), taken with my phone :cool:

The first is (just taken from my desk at work, haha) a rawified version of my favorite salad since childhood -tomato, cumcumber, onion, sour cream and salt- with kale added, and zucchini as i ran out of cukes (:eek:) and Alissa's sour cream with some variation, as I don't use miso, I added onion powder, a little tumeric, dash chili powder, and a dash of all purpose seasoning. I don't know if there's a secret to organic spices, but that seasoning really did it, FANTASTIC, I got quite the jolt as it was exactly like sour cream! The secret to this salad still holds true, PLENTY of salt. Garnished with the easiest pizza crust points, and parsley

The second (from yesterday) is a rawified Spicy Kani Salad

I made the Almond toast because the photos of it in the book made it look so gutsy and full of character and I was not dissapointed.

After I made the Almond Toast I got to thinking, hmm,:rolleyes: what if I made a few changes. . .well it worked, I made THE most amazing carrot cakes!

Unfortunatly they did not last long enough to put a nice cream cheez frosting on!

My Almond Toast to Carrot Cake recipe!

1/2c. soaked almonds chopped (toss in at end)
2c. almond flour
1/3c. flax meal
1c. carrot pulp
1/2 - 1c. apple juice
1/2c. agave
2t. cinnamon
2t. pumpkin pie spice
handful currants (toss in at end)
salt

Process all BUT chopped almonds and currents in FP. Mixing them in at end.

The secret with this is as you lay it on the dehydrator sheet dont SPREAD it. just loosely place it on the teflex close enought so it stickes together. What you are trying to avoid here is compressing it so as not to get a very heavy paperweight cake! Dehydrate overnight. After flipping onto screen score into desired portions. Dont over dehydrate as will get rubbery. This one is nice slightly moist. Keeps in fridge for a good long time!:p

This will make a great holiday cake/cookie/bars etc!

I came across these pictures of the first times I made Alissa's lasagna from her book Living on Live Food.

I tend to make this when the weather gets cooler and cannot recommend it enough! It is simply sublime!

Non of it is difficult but it does take a bit of time. I have streamlined this by making the "components" over the course of a week (they last a long time) and then assembling everything when I have time.

The components in and of themselves are just wonderful and I found I used the leftovers for many other recipes.

I strongly recommend slicing your zucchini/courgette thick as this is super rich and needs the veg factor. I would even recommend more than one layer of veg within each veg layer to cut down on the richness.

The noodles are zucchini julienned, with a julienne peeler. The sauce is fresh tomato, a quarter of a red pepper, a few chunks of zucchini (left over from the peeled) a quarter red onion, one shallot, four sundried tomatoes, part of a jalepeno, a few basil leaves and some Garlic & Rosemary seasoning. I added one avacado to make it thicker and creamy because I usually make pasta sauce with cream. I don't know how long it'd last in the fridge but it sure was good!

Well I had lots of pulp left from juicing and it was a combo of carrots, celery, beets, pear and an apple (mostly carrots though) and made it into the onion bread recipe and omitted the onions.

Okay, so I've got this (medium sized) butternut squash that appeared outside my doorstep one evening (from the neighbor up the road) and it's been sitting on my counter, me looking at it, it looking at me, each of us wondering what's gonna become of it?
Tonight I grabbed it, veggie peeled the "skin" off, cut it into chunks (seeded it) and ground it up fairly fine in my food processor. Then grabbed some (dehydrated) nut pulp that I had in my freezer from making nut mylk, about a cup or so, two good sized handfuls, processed that with cinnamon (to taste) and freshly grated nutmeg (to taste), an apple (not peeled, but seeded) and about a tablespoon of agave nectar. Processed all this scrapping down the sides periodically. Then coarsely chopped some raw hazelnuts (roughly a cup or so), and added them and about a cup of red flame raisins and stirred this up by hand. Then shaped into a cake (about an inch tall, and about 6-8 inches round) on a teflex sheet and with the rest of the "dough" shaped that into cookies and they are all dehydrating. The "batter" was so yum-oh and tasted of Fall! I don't know if I'll do a frosting or not, this may be just good by itself. I had to chuckle because here I whipped up a "cake" and cookies in about ten minutes if that long. It amazes me how quickly recipes can be prepared.

Spent this afternoon relaxing and making raw cheesecake

was a bit rough..but basically

1 cup cashew
2 cups water

soaked- 3 hours, blended with 2 ripe banana, vanilla pod and agave. This mixture was then left to thicken up for 1 hour.

Texture was like double cream when I finished this.

Base

Prunes(I dont like dates)
Pecans crushed

pressed this into a glass dish, chilled for several hours.

Then poured the cheeze filling in, froze for 3 hours, then returned to the fridge.

Looks yummy, cant wait to eat :D

I had some left over filling so i added a little carob and coconut oil, as a frosting and as it is October, i drew a web and placed a spider on it, i'm so pleased!! hehe :D *G*

the cake part is almons and dates actually+ some salt. I didn't want it to be too sweet since the carob butter is (and i also used dates for it)

the cake part is almonds and dates actually+ some salt. I didn't want it to be too sweet since the carob butter is (and i also used dates for it)

Here is some of the raw yummy dishes that I have been enjoying
1.raw pizza with white sauce, parsley, green onions, sliced tomatoes, some raw olives, marinated onions and mushrooms and sprinkle of hemp seeds
2.raw sandwich with nut less bread from James Russel, white cream, slice of tomato, marinated mushrooms, onions, lettuce and avocado
3.big taco with taco meat, salsa and guacamole and the rounds are zucchini
4.No name yet but it's the recipe for famous onion bread, topped with sour cream from the same book, chopped tomatoes, shredded lettuce, some pepper, and chunks of avocados.

I made Karen Knowler's 'milk chocolate' the other day, but since I found it to be too sweet and too sticky/liquidy (although still delicious), I made some adjustments... and it turned out to become the most delectable orange chocolate brownie I've ever tasted. I didn't change a lot, only cut the amount of agave in half and added orange peel, so really, thanks to Karen in the first place for the original invention!

ORANGE CHOCOLATE BROWNIE
- 30 almonds, soaked and peeled
- 1/2 cup ground cacao nibs
- 1/2 cup carob powder
- 5 tablespoons dark agave nectar
- small piece of vanilla
- zest of 1/2 orange (the best looking/smelling orange you can find)

Blend until a beautiful dark mass, put in a container in the fridge or freezer.
Enjoy!

Note:
I don't have a zester, so I just scraped/cut the orange peel off with a knife, and the chunky bits really added to the flavor (I made another batch for which I ground up the chunky orange peel bits first, but it didn't turn out as well). Also note that the amount of agave I used, is half the amount recommended in Karen's recipe. It's sweet enough though, and cutting the amount in half really gives this brownie it's crumbly, brownie like structure.

So this was my first creation in my dehydrator. I got a new food processor the other day and put in a bunch of veggie, carrots, tomatoes, onions, celery, peppers... to chop for my salad. Since it was the first time i used it when I pressed the button it minced them to a pulp. I ate as much of this vegetable mush then just put it in the fridge.

So last night I decided to make wraps out of it. Here they are. Really simple, really tasty!

I see we have all been hankering for chili now that fall is upon us. I dug this out from an archived thread started by Yani. I believe she got it from one of G. Coussens books.

The only addition I did was to dehydrate the veg for 24hrs instead of one and I stirred in huge amounts of fresh chopped tomatos to lighten it up a bit plus 2 bell peppers & 1c. sun dried tomatos. I felt no need to dehydrate after mixing all together. The onion dip is a winner with this dish.

The chili & onion dip make a great dip as a whole with crackers.

Wow, I haven't been to this forum for ages being so busy and all, but now I remember why I loved it so!

These pictures give me so much inspiration and determination, I often show these to non raw folks just to show them how good raw food can look (and I'm sure taste!).

It was my birthday recently, and I'm 100% raw at the moment, so there being no raw caterers where I live, I made my own raw cake which was a hit with the fam, my son adored it. There were scuffles over the last slice I can tell you.

I've also included a pic of a choc coconut bar along the same theme I made ages ago.

Hi Spiralgirl,

I'm happy to post the recipe, but it's a bit wordy at the mo (first draft and all) plus I'm an eyeballer, which means the measurements may not be exact, I'll have to repeat the recipe to get these right. Hope it's ok to post it in this thread. The choc fudge layer recipe is an adaptation of RP's brownies, I find the maca powder makes it more cakey/fudgey for this recipe.

Chocolate Coconut Bounty Cake (Raw)

Ingredients
Chocolate fudge layer
3 cups of walnuts
3 cups of medjool dates (pitted)
4 heaped tablespoons of raw cacao powder
2-3 tablespoons of maca powder (optional)

Coconut Ice Layer
3 cups of organic desiccated coconut
1/2 cup coconut oil
½ cup of agave nectar or other raw sweetener
enough water to ‘wet’ the coconut
pinch of fine ground celtic salt

Chocolate frosting
1 cup of coconut oil
½ cup of raw cacao powder
½ cup of agave nectar or soaked, blended medjool dates

Equipment
You will need…
A food processor
A springform pan (or other slice pan lined with baking paper)
Something to smooth down cake layers (the back of a spoon or a spatula)
Baking (or greaseproof) paper

Method

To make the chocolate fudge layer, place the walnuts into the food processor, then the dates. Blend into a crumbly mixture. Stop blender and add cacao and maca powders using a spoon to mix the powders into the walnut/date mixture. Blend again stopping when needed to give the mixture a stir so it’s evenly blended. The fudge mixture is ready when it’s doughy and all the walnut pieces have been completely blended in.
Take approximately 1/3 of this mixture and press it into a layer in the springform pan to form the bottom layer of the cake. Set the rest of the mixture aside at room temperature.

To make the coconut ice layer, place the desiccated coconut into a large mixing bowl and drip enough water in so that when it is stirred in, the coconut is slightly wetted and becomes a little fluffier. Add the coconut oil (if room temp is cold and oil is solid, sit container in a bowl of warm water until oil is liquid or semi liquid.
Stir in thoroughly. Add the pinch of salt and sweetener and stir thoroughly.
Place spoonfuls of the coconut mixture onto the fudge layer in the springform pan, smoothing it down with a spatula or the back of a spoon until it is an even layer.
Next comes another layer of fudge, but this must be rolled to an even, flat layer before placing on top of the coconut ice layer. Take two square sheets of baking paper (at last the diameter of the springform pan) and place another third of the fudge mixture onto the bottom layer of baking paper. Place the second layer of baking paper on top of the fudge and using a rolling pin, roll the mixture out till it’s flat, roughly circular, and the same size as the springform pan. Take the rolled fudge layer and place gently onto the coconut layer, pressing down to set it in its place. Take a knife and cut round the edges to remove excess fudge. Add another layer of coconut ice (repeat as before) and then a final layer of fudge (repeat as before with rolling pin and baking paper).

Note: You can add as many layers as you like to achieve the required height. You could also stop at a coconut layer, though this may make it harder to frost the cake.

When finished, place the cake in the fridge.

To make the chocolate frosting, place the liquid or semi liquid coconut oil into a bowl and add the cacao powder. Stir thoroughly until all cacao powder is mixed in and the mixture is smooth and lump free. Add the agave nectar or soaked blended dates while stirring until fully blended.

Take cake from fridge (by now it should be slightly harder and easier to handle) and take it out of springform pan. Place onto a decorative plate and frost with the chocolate frosting.

Decorate with fresh fruits such as strawberries raspberries or mangoes, desiccated coconut, fresh coconut shavings or fresh flowers and place into fridge until required.

Enjoy!

This is best made fresh and served right away. I made it and then let it sit overnight and the next day it was quite mushy so I drained it and it was good but making it fresh is really amazing.
