i just got tons of tomaotes that are almost too ripe.

they are very soft, i couldn't even wash them without them falling apart

so, I decided to just toss them, unswashed, whole, in a baggy and into the

freezer!

I know that doesn't sound thrilling, but I discovered something that I didnt know before....

after the overripe tomatoes are frozen, I can then wash them under running

running water REALLY well, since they are conventional, and the skins some right off easily, and they are a cinch to wash this way!!! LOLOLOL:D

Then, after they are washed and "peeled", I then slice them thinly while they are still frozen (don't worry, it's REALLY easy to slice frozen, overripe tomatoes after they have been under running water a few minutes) and then they are ready to go into recipies when I need them.

I like to discover new ways to prepare food, especially if it's simple and inexpensive!!

fer sure, that's how we like to do them. Best way for raw types to do it, and it's fast when the tomatoes are coming at you faster than you can use them.

A tip for you, wash them, and just cut out the core. Then bag and freeze, and when you take them out, they'll be easier to deal with.

thanks, Exurb,

The problem was that they were
so ripe that I couldn't wash them
or they would fall apart,

That is why I froze them, so that I could
scrub them really well. It's really
handy to be able to buy
cheap overripe tomatoes and STILL
be able to wash them easily.

I don't core them. I just thow them
into recipies. Although, I like to
keep recipies really quick and simple

Green, whatever works for you!

I like coring them because when you unfreeze them, it makes the skin pop off even easier, you put the tomato in the palm of your hand and pull your fingers downward and the skin comes right off.

I actually took a bunch of my roma 'maters and cut them I'd say about 1/4 inch or thicker, put on the mesh screen of the dehydrator tray, sprinkled with italian seasoning, and dehydrated until they became pliable, like sun-dried 'maters. Now they are in a jar. I have my own dried tomatoes!
Yep, freezing and then running under water removes skins easily - cool! Thanks for sharing!
