Hello all! I'm new to this and am looking forward to getting started and the journey. I see a few of Alissa's recipes call for soaking dates, but the chart in the book does not discuss how long they need to be soaked. The recipes I'm referring to in particular are the date nut torte, fudge balls, and carob fudge sauce. Thanks much!

soaking dates depends entirely on the date. Some dates are quite hard, so they need to be soaked until they would blend into your recipe. Other dates are so soft they don't need to be soaked at all.
You can't really over-soak them, so I would say if they're really hard put them to soak a few hours in advance and you can't go wrong. Then you can learn from your dates how long they need to soak by checking on them.
I find it easier just to buy the kind that aren't hard. Some people like medjool, I like using honey dates in a package from Parnoosh, they're like "buttah".;)

if you soak them too long though theyll lose a lot of sugar and wont taste as sweet in your recipe! just keep an eye on them the first time and learn from it :)
