I had some figs the other day and remembered that you just love them to death.
Try these, they are easy and very yummy.
Orange salad with figs (or dates)
5 large navel oranges, peeled, sectioned and skin removed (called supremed)
2 tsp orange blossom water
2 tsp honey, floral variety like orange blossom
1/2 cup sliced fresh figs (or dried chopped dates, soaked, drained and towel dried)
1/4 cup chopped almonds
1/2 tsp ground cinnamon
fresh mint leaves, for garnish
Save the excess juice from sectioning the oranges. Combine orange blossom water and honey in a large serving bowl and mix well until honey softens. Alternatively, warm over double boiler to liquidate honey. Add the orange sections, orange juice, figs or dates, almonds and cinnamon and toss lightly to mix. Garnish the fruit salad with the mint and serve.
Version 2
Minted fig and orange salad
2 navel oranges, peeled, sections removed and "supremed"(see explination above)
8 fresh figs, quartered
1 cup raspberries
1 cup raw vegan "yogurt" (any recipe will do)
2-3 T chopped fresh mint leaves plus sprigs for garnish
1 T honey, orange blossom or other floral honey
1/2 tsp ground cinnamon
Cut each orange section into 1-inch pieces. Place the oranges and any juice that accumulated on the cutting board into a large bowl.
Add all of the remaining ingredients to the bowl except the raspberries and toss to mix. Chill until ready to serve, garnish the salad with the raspberries and sprigs of mint.
Enjoy!!!
