I came up with this recipe for veggie sushi...it is quite tasty and even my husband who is not raw or vegan liked it.

Blend 2 medium sized carrots and 1 medium sized red pepper in a blender along with a chunk (thumbnail size) of ginger and a tablespoon of apple cider vinegar. This should make a paste.

Take a sheet or nori and spread about 3 tablespoons of this paste on the nori. Then take a yellow zucchini and using a potato peeler, peel at least 6-8 "ribbons" zucchini. Place about 3 or 4 zucchini ribbons on the nori, then place some green onions, thinly sliced red pepper and any other veggie you'd like on there (I then sprinkled some sea salt) and then top with a few more ribbons of zucchini. Then roll it up as you would a sushi roll and cut it in rounds.

The zip of the apple cider vinegar and the red peppers etc. remind me of the spicy tuna rolls I used to enjoy. You can also taste the fresh ginger in the puree...I added a bit more ginger (and vinegar) when I made this recipe a second time...tasted great.

Do you use the pink ginger they use for sushi, or the kind you buy in the produce that looks like a hand and is yellow inside?

I used the ginger that you buy in the produce store that looks like a hand. So it was raw...and not the pickled ginger that you get in the jars. Please let me know if you come up with any other ideas....I did the carrot/pepper paste just because I find the nut paste hard on my stomach....

if you want your regular ginger to be pink just add a touch of beet to the veggies before pureeing.
i believe in the authentic pink ginger they use ume plums to color it or shiso leaves....

That sounds really really great!
I always have a problem making the rolls. Sushi challanged I guess.
Any tips? Do you put the veggies in the middle only or spread them out?
how do you get your rolls uniform?

Hi Texas,

I just start with the piece of nori (seaweed) and then spoon the carrot/pepper/ginger paste on the entire area but being careful not to go right to the far front edge (because it will squish out).

I then place all the veggies at the end that is closest to me (so I don't put them in the middle). You can pile them on ok this way and then roll very carefully...the liquid of the "paste" helps seal everything so it doesn't fall out. I might post some pics later...

Thanks for sharing. My friend and I are having a veggie sushi party this weekend and since I just started raw today this will be helpful. I still want to participate and fulfill my sushi cravings. :)
