I came up with this recipe for veggie sushi...it is quite tasty and even my husband who is not raw or vegan liked it.
Blend 2 medium sized carrots and 1 medium sized red pepper in a blender along with a chunk (thumbnail size) of ginger and a tablespoon of apple cider vinegar. This should make a paste.
Take a sheet or nori and spread about 3 tablespoons of this paste on the nori. Then take a yellow zucchini and using a potato peeler, peel at least 6-8 "ribbons" zucchini. Place about 3 or 4 zucchini ribbons on the nori, then place some green onions, thinly sliced red pepper and any other veggie you'd like on there (I then sprinkled some sea salt) and then top with a few more ribbons of zucchini. Then roll it up as you would a sushi roll and cut it in rounds.
The zip of the apple cider vinegar and the red peppers etc. remind me of the spicy tuna rolls I used to enjoy. You can also taste the fresh ginger in the puree...I added a bit more ginger (and vinegar) when I made this recipe a second time...tasted great.
