View Full Version : Help me convert a SAD recipe to Raw

My bad! Had a cooked food item; it was angel food cake with fruit medley with a lemon glaze/ sauce over it.

I was thinking it would be easy enough to do a nut and date mix for the angel food cake. If anyone has any ideas how to do something with a lighter texture, I'd love to hear it.

Now the lemon glaze sauce was thickened with corn starch. Any suggestions for duplicating that? I think a raw version would be delightful. Thanks in advance.

I love the topping for Alissa's Date Nut Torte. It is very lemony and sweet and thick! Would make a nice lemon glaze.

I'm thinking perhaps nut milk pulp or even dried/ground nut milk pulp would produce a lighter texture.

This is one of my Favorite cakes. In one of the raw families cook books they make a cake out of:

2 C Raw Tahini
4 C Coconut flakes (raw)
1/2 C Honey (or agave)
1/2 tsp.sea salt

Mold 1/2 into a plate then I spread a layer of bananas (or other fruit)
then use the other 1/2 of mix *above* and put this on top of the fruit layer. Shape into a round cake, and then make a frosting of your choice.

I was going to say coconut flakes for texture so the above may be a good option. Nuts will make a tougher texture, not as fluffy...
