View Full Version : Juicy Avocado & Kale Salad! mmmmm

I know I know, kale isn't often the most appealing of greens - but that's why it's great to find a recipe which makes it taste fabulous!

I'm not sure if Alissa does a recipe similar to this, but I got this one off Karen Knowler (type Karen Knowler into the 'You Tube' search engine, and there's a bunch of raw prep recipe videos by her - and that's where I found this recipe.)

The texture of the kale changes completely when you add the olive oil and salt - it goes all juicy and gorgeous. Try it and see! Or check out the video on You Tube first so you know what I mean.

Kale & Avocado Salad[Karen Knowler recipe]

Ingredients

Kale
Avocado
juice of 1/2 a lemon
Cold pressed olive oil
Himalayan salt (or other salt)
Tomatoes (I used vine tomatoes)
Spring onions (think you call these Scallions in the US?)

Instructions

Chop up leafy bits of kale quite small (into about 1 inch pieces) and discard the fibrous stalks. Chop enough to fill a medium sized salad bowl, or as much as you want.

Pour over cold pressed olive oil and a tsp (or good pinch) of Himalayan salt. Rub the oil and salt into the chopped up kale with your hands for a minute, until it is softened and juicy. The texture of the kale changes completely.

Chop (or press out of skin straight into the bowl) half a ripe avocado into the salad and rub into the kale leaves with your hands until well dispersed.

Add chopped tomatoes, onions (I used spring onions), and the juice of half a lemon - don't forget the lemon as this 'makes' it. Guess you could then add any other veggies you like, like red pepper might be nice.

Serve as it is, or in a Nori sheet as a wrap with extra avocado and Eggless Egg Spread.

yeah, i can tell that this is a good one...when i get a taste for some soul food, namely greens, i use rawkinlocs recipe that is posted on her site... oh man oh man, almost drooling thinking about your recipe, i bet the avocado is just lovely in this dish

I make this once a week! It is FABULOUS.

I use 2 avocados. ;)

I tried this just the other day and was going to tell everyone about it. It is very good and I don't really like kale or avocados for that matter, but Bampot is right it totally changes the kale. I got the receipe from the same place. You won't regret trying this

Mmmm, yummy -- it's very like one I make a lot that I thought I got from Alissa's book, but now I can't find it. Maybe it was a recipe from these boards some time ago. Anyway, it's a great way to enjoy those healthy dark green veggies!
