Hi All!
Well, the "bread" is in the dehydrator, but I wanted to ask...is it supposed to cook only 1/2 way before adding the other ingredients? Mine is still "mushy" in the middle, but he crust is hard... Should I proceed now or wait until the bread is no longer "mushy"? It's been dehydrating all night...

Hey there. That's a hard question without being able to see it. But if you can work with it (fill it and then roll it over and seal it), then don't you dehydrate that again for a bit? Dunno - hopefully Rawkinlocs will pop back in here...she's like the raw dough queen! ;)

Yeah, once the calzone crust has been flipped and dried on the opposite side it's ready to fill even if the inside is mushy. Remember, you'll still be drying it for quite a while after the fillings have been added and it's been assembled. Also, you need the mushiness inside to help with sealing the sides as described in the instructions.
When/if you take the Level 2 class, you'll get a better idea once you actually see it done. But you seem to be on the right track!

You're fabulous!!! Thanks for the encouragement!!! :) It's in the dehydrator...Boy, it sure takes long enough to cook, huh!!! I can't wait to eat it! It smells terrific!!! ;)
