Hello,
This is what I whipped up yesterday on the spur of the moment.

This is roughly how I made it:
Cinnamon Flax Cracker Part
*35 ounces of flaxseed and water mixture (started with 4 cups of ground flaxseed and 4-6 cups of water, you want it blended but not too thick so you can spread it on your sheets (this is approximate as I didn't exactly measure things here, the 35 ounces was left over from a plain batch)
*1-3 TBSP of agave or honey (I used honey and mine was pretty sweet so you may want to try it with 1 TBSP and then go from there).
*some cinnamon (add to taste)
*grated nutmeg (to taste)
Pulse this in food processor, then put in dehydrator at 140 for first two hours and then down to 110 for maybe 14 hours, it was raining for a few days when I made this so I think that is why it took a bit longer than normal. It might be different where you live. You want it to be soft so you can roll them up. I think due to the honey in mine they never got really crispy even after I kept them in there a lot longer. Cut all the pieces into squares with a knife or scissors (we have a pair just for food cutting)
Frosting (this recipe was posted by Joz, but I added vanilla to it)
*1 cup of coconut oil (whip this with beaters, then add
*1/4 cup of agave
*1/2 juice of one lemon (you can add more if you want)
*1/2 tsp of vanilla
Whip again.
Chocolate Sauce
*agave
*cocoa
use equal amount of both and stir or I put mine in an old agave bottle so you can swirl better when you design with it later.
Assemble
Get your squares of cinnamon flaxseed cracker while it is still soft and spread a layer of the frosting on it, then get a banana and slice it up thinly and at the end of the cracker line up 3 slices of banana circles.
Take your sauce and drizzle it all over the cracker. Then roll it up like a sushi roll. Arrange however many you want on a plate. Then drizzle designs with the chocolate sauce, add banana slices, then top with unsweetened shredded coconut flakes.
Voila your masterpiece is ready.
