Hi all,
I'm trying to turn my current vegan menu which is about 60% raw into a 100% raw menu. Though I'm not trying to be too picky about calories (I'm a bit overweight but know from experience that if I keep to a healthy eating plan and stay off of the junk food binges, I'll get to the weight I want) but I don't want to be eating too many "rich" foods (such as avocados, nuts, etc.). I'm trying to make my menu primarily raw veggies and fruit.
I'm a mini-meal person, which is why this might look like a lot of food.
Here's what I have planned so far:
Meal #1:
Fruit (2-3 servings)
Meal #2:
Tehina or Guacomole with raw veggies or raw soup with ½ large/1 small avocado
***(I have some recipes that add a bit of olive oil, 1 tsp - is extra virgin olive oil, first cold pressed considered ok for a raw diet? I thought I read somewhere that it's one of those not-exactly-raw-but-not-cooked-either things or am I wrong?)
Fruit
Meal #3:
Green salad with Tehina dressing or 1 small/1/2 large avocado and raw dressing
***I'm basically trying to alternate between the tehina and avocado in meals 2 and 3 to get some variety in, so if I've had tehina in meal 2, then I'll have avocado in meal 3***
Meal #4:
Fruit smoothie
***Basically, frozen fruit, orange juice, a bit of honey, raw hemp powder, water, and ice - if I get the courage, I might try one of the green smoothies in Victoria Boutenka's "Green for Life" - I haven't had much luck with green smoothies, though :D***
Meal #5:
Salad with veggies and fresh fruit
***This is where I'm a bit thrown. I usually add some olive oil and cider vinegar as well as 1 oz of nuts and a few tbsps of dry fruit - but I'm trying to make this salad much lighter and take out the oil, nuts, and dry fruit, so I'm a bit stuck as to what to do with this - I'm thinking maybe a non-oil citrus dressing with orange/grapefruit juice, lime juice, ACV and some unsweetened coconut? Is the packaged shredded coconut (like the one from NOW brand) considered raw? I'm guessing it's been dried in a high temperature to make it not acceptable. I guess the best thing would be to buy fresh coconut and grate it myself, but I'm a bit intimidated about opening a coconut ;). Any ideas here for a non-oil dressing that might work with "crunchy" fruit like apples and green would be helpful***

***So what's the deal with dried fruit? Should I just assume that all fruit (even the organic ones in the bins) are not sundried unless they specifically say it? And if that's the case, then is the only option for truely sundried fruit is to order it online from a reputable place? Where could I order something like that? ***
2 tbsp nut butter + ½ tsp raw honey (only if I feel a craving coming on...)
