The famous Raw Cheesecake with blueberries and blueberry sauce...The BEST! I am soooo addicted to this.

Peach cobbler with Vanilla ice cream ( This is the ice cream with the cashews, coconut & almond milk...my fave...tastes better than SAD)...Yum oh

I really look forward to my dessert after eating fruits, veggies and salads all day!

Here is the Cheesecake recipe...

Crust...

1 cup dates
1 cup walnuts ( I used 1/2 cup macs & 1/2 cup walnuts)

Put in food processor and press into pie pan.

Cheesecake Filling

3 cups of cashews (soak in a bowl for at least an hour this will make them nice and soft)
3/4-1 cup of lemon juice (and orange combo...I did half orange juice & half lemon juice...3/4 C)
3/4-1 cup honey (and/or agave) (I used Honey)
1/2 cup of coconut oil, melted (I put it in a bowl over another bowl of warm water)
1 banana (this is the KEY ingredient to make it extra smooth and creamy!)
1 teaspoon of vanilla
1/2 cup water

To make the cheese, blend the cashews, lemon, honey, coconut oil, banana, vanilla, and 1/2 cup of water. Blend until smooth and adjust to taste. (could add orange extract and/or cocoa powder for variations)

Pour the cheese mixture onto the crust.

Place the cheesecake into the freezer until its nice and firm (I put it in for 3-4 hours tops).

I really like this recipe better with the banana as it is much creamier. It is soooo great!!!

eta: you know..i love eating raw foods. i can eat all the ice cream ( I'm latose intolerant ) and any dessert i want and don't have to worry about gaining weight or getting sick! :)

Thanks for posting your recipe with the "secret ingredient" Elaine! I just made this cheesecake since it's my boyfriend's birthday. And he loves cheesecake. ;) I always have a hard time making my cashews smooth, because I'm just using a magic bullet... but I added a banana and wow - does it ever blend better and smoother!

I'm waiting (im)patiently for him to come home from school so I can bring it over and we can feast on the cheesecake together. I should really make this more often though. Thanks again!! (I will post pictures of mine after we cut it open yumm!!)

Yay!! Thankyou so much for sharing those recipes, and the pictures. My girlfriend told me to "have at" her peach tree today...and I'm talking HUGE gorgeous peaches. So I've got bags full...and wondered what will I do besides smoothies....
And wala!!! Peach cobbler...fabulous idea!!! I'm going to try yours and Rawkinlocs recipe too. They look wonderful.
But not tonight...
my tummy is so full of raw rootbeer float ice cream....I feel like I'm gonna float away....hee hee,

Wow, was that ever good. :) My boyfriend loved it too! For a topping, I blended some goji berries, raspberries and strawberries with some honey and poured it over. It was excellent!

Thanks again for the recipe! I now know the secret ingredient. ;) (bananas!)

Oh my I made this today and it is fantastic!! I did not have walnuts for the crust so I used Pecans. DH asked me if it was a grahm cracker crust.

Okay Okay Okay..how in the world am I gonna do my juice fast for the last week of July and not eat any of these yummy dishes posted on here. I've got to try that cheesecake recipe for the kids next week.

I'm so glad you posted that recipe. I made ice cream for the first time last week. It was maraw's maple pecan ice cream (except I used walnuts). I loved it but the only thing is that the bananas are powerful. That cashew one sounds like something I might just go crazy over.

I'm so glad you love this recipe! The basic recipe is from this site and through experimenting with it (and enjoying each version and just having to of course taste test each time!) I really found that the banana really is THE special ingredient. It just makes it so much more creamy, and for the flavors using both orange and lemon juice, well I just can't think of a dessert recipe I enjoy more than this one now.

I think the original recipe was called "Just like cheesecake" and Alex (?) posted it. I just had the fun of revising the recipe to suit my taste buds and the banana really did that for me!

And I LOVE your pictures of both recipes, I've got to make a cobbler again soon too! :p

You are so right about the banana, the creamy texture just is the best! I've got to get another cheesecake made soon, I keep it in the freezer and add the sauces or berries to each slice. Although it sure doesn't last long does it!

Pecans in the crust would be awesome, there are so many variations on crust recipes it could be a little bit different each time.

I vote for a Raw Food Talk Cheesecake party!

Looks yummy. And I understand why the banana is used however, does the banana overpower the other flavors? I like bananas okay, but it seems when I make anything raw with banana in it to give it better texture the banana always seems to be the ONLY thing I taste. Especially frozen over ripe bananas. I can't use them to make any kind of raw ice cream because it just ruins any other flavor to me. :(

And you used fresh I assume since it didn't say frozen banana? I guess a very green banana would do to not have a big banana taste, plus they seem to have better texture when not too ripe.

Okay, I MADE this cheesecake WITH the banana mixed in and let me tell you...it's AWESOME! I think this is the best cheesecake attempt yet ONLY because before, I was using extra virgin coconut oil and that was ruining it for me as the flavor was overpowering. But thanks to Joz (((((Joz)))))) for hipping me to the Omega Nutrition 100% Coconut Oil (NOT the extra virgin), I was able to enjoy this without that coconut-y flavor!

Oh, and I did NOT taste banana at all. I was a little reluctant to use it, but I was gonna take Cinnamon's word for it (since she does live in WA and if it didn't work out, I could get to her easily! ;) just kidding Cinnamon!) but I was pleasantly surprised that there was no banana-y flavor at all.

Now to make some strawberry sauce to pour on top! :::smacks lips::: Thanks for sharing this variation and again, thanks Joz for the coconut oil tip!

wow these look just like the cooked versions. they probly taste better though. how good of a blender do you need to make these desserts? i dont have a vitamix, just an ordinary blender, and am wondering if that is strong enough to blend up nuts? does soaking them make them softer so they actually get to a creamy consistency?

I am so glad you are enjoying the cheesecake Rawkinlocs!! I'm glad you tried it, and I'd never give you bad food advise now would I?? :D And yes, you could get to me easily if you didn't like it! Ha!

And no banana flavor, it just adds an extra creamy texture, I also use the Omega Nutrition 100% coconut oil and it really is THE best. Enjoy!!

It is very much like jam and I've actually used this same recipe for jam and you can use any type of berry or fruit! It is great with almond butter on a flax cracker, yum!

For raspberry sauce:
1 bag frozen raspberries, thawed
1/2 cup dates (soaked for a few hours, drain liquid)

Process raspberries and dates in a food processor or blender until blended. I keep it in the fridge and drizzle over individual pieces of cheesecake when serving.

Enjoy!

Sounds good but this is what I've been getting into: two avocadoes, a couple of heaping teaspoons of raw cocoa and carob mixed together, generous with the honey, pinch o' cinnamon, splash of vanilla, ta dah! incredible, guilt-free chocoalate mousse!

I get the Omega brand talked about in this thread at our local grocery store, they have a great health food section. I'd bet most health food stores carry it though.

Well, I've used raisins in recipes when I didn't have dates and they just make things a bit sweeter (it seems to me). I'm not sure about figs, I eat them plain but don't use them in recipes so maybe someone else can comment on them!

I've made this cheesecake twice, adding a little mango to the mix and using agave instead of honey. It was AMAZING, thank you so much for posting this!
