View Full Version : Freezing Fruits and Veggies?

Can anyone give me some insight as to what fruits and veggies they have found that can not be frozen? I don't have a dehydrator yet and want to know what I can freeze and what I can't so I can take advantage of the seasons fruit and veggies. Thanks a Bunch to All!! This board has been a lot of help for me!!

My experience? Mostly all fruits can be. Banans w/their peels on (to thaw, place in cool water for a few second - peels slide right off).
As far as veggies? I don't freeze a lot of them. Instead I'll make something and freeze, like Alissa's marinara sauce, then freeze.
Experiment with one or two pieces of fruit/veggie and see what happens.

Just be careful when freezing your food because it can compromise the nutrition..you should try and eat as much fresh food as possible :) Having said that I don't freeze anything so I wouldnt know what can be frozen or not :p

I freeze just about everything.....even avocados. According to my research, freezing puts enzymes to sleep and they become fully active when they awake after thawing. Some vitamins are reduced by trace amounts after being frozen.

aack :eek: !! I read somewhere else on the forum to take the peels off and freeze them - shoots !! I just froze a lot of bananas yesterday- with the peels off -- will they be okay?? :o maybe if I make a bunch of smoothies for dh I can use those up. I can't eat that many bananas - allergies!! I can a little bit - but not a lot of bananas...

but - we just cut down another bunch from our tree... so now I've got a whole lot more -- I guess I'll freeze the next batch with the peels on! ... thanks VeganforLife!!

starfire - don't get yer aack in a whack - they will be fine. Most folks freeze w/the peels on. I "discovered" this by accident. I was lazy, going out of town and had oodles of 'nanners I had to do something with. Freezing with the peels on keeps the 'nanners from becoming quite as brown. I'm a lazy freezer type of gal. I too freeze avocados, whole. I don't feel it compromises the food composition too terribly much. And yes fresh IS best if possible, but just think back in the day, no think further back when folks HAD to freeze their gatherings of the summer to last all winter long. They were a much healthier lot then us.

frozen fruit smoothies are delish!! esp frozen berries it helps me a lot curbing my choc cravings

Well, I have been freezing blueberries forever since I can only get them at this time of the year and them actually taste like a blueberry! But I want to be able to freeze as much in season stuff as possible somehow. I have a real hard time eatin certain things out of season. Apples, berries and tomatoes at the top of the list. The good news though...I ordered my juicer and dehydrator yesterday..got a good deal and both with free shipping! I am so excited!!!:D
Thanks for all the great info!!!!!! This is a whole new world for me - my mother thinks I am nutz!!!! But she is also the one that has Type 2 diabetes and wont do anything!!! Not me buddy..I am heading stuff off at the pass!!!

So what fresh veggies does everyone freeze? Right now, I don't freeze anything except bananas (peels off and chopped up). Also, I don't like anything sitting in the freezer for more than a week.
