and oh, my! Raw food does not have to be boring at all! I had an avocado that was getting a little too ripe so I whiopped it up with a banana, some soaked dates & some cocoa powder. And then I threw it in the freezer so it would get cold. It tastes just like chocolate pudding! Thanks for whoever came up with this! It's wonderful!

But what would make it really divine - perhaps a raw whip cream to mix in so it's like a mousse.

Any suggestions or ideas on that?

TIA!

Carmella posted this a while back:

Whipped Cream
From Alex Malinsky's Strawberry Cheesecake recipe

1 cup young coconut meat (chopped up)
3 tbs raw cashews or mac nuts (soaked for 8-10 hrs)
5 dates or 1 tbs honey (or more if you like it sweeter)
3 tbs coconut water or almond milk
1/2 tsp. lemon zest
drop of vanilla extract

Enjoy ~ Cathy

When I make chocolate pudding I just use avocado, cacao powder and raw agave syrup. It's like a pudding right after it's blended, and more like a mousse after it's been in the fridge Mmm!

These recipes sound sooo good. Do you use a blender or food processor? Need to satisfy a sweet tooth tonight with one of these puddings.

Hey Lady,

I just use a blender. It takes awhile and I have to stop and stir it around a few times, but it comes out so whipped and delicious! You're in for a real treat!!

livenraw,

Spicy guacamole won out on my last round of avo's, so I had to wait for the current "crop" to ripen. Made the pudding tonight--oh, this is the best thing that ever came out of my Vitamix! Set the timer for the freezer and am now savoring this most awsome dessert. Totally blows all other puddings out of the water. Thank you so much for sharing this wonderful recipe.

Jenna--love your new avatar!
