View Full Version : Substitute for Nama Shoyu in Onion Bread Recipe?

I was really looking forward to trying the Onion Bread recipe. Can you use Braggs? If so, how much? Is there another substitute I can use? Also, how long should it dehydrate for? I read the other threads, but found many different times.

You can sub with Bragg's - same amount - you could use Tamari but it's not raw...but it IS wheat-free.
Dehydrating times will often vary based on climate, etc. so one person living in sunny CA may not need to dry as long as someone who lives in a more humid area. Also, after the initial turning the bread over, you can dry it until it's desired dryness. Some like it more pliable and some like it more cracker-like so of course they'd dry it longer.

Are you saying Noma Shoyu has wheat/gluten in it?

Actually Nama Shoyu is unpasteurized soy sauce so it should not have any wheat in it. I think. Pretty sure....

Ingredients: OG whole soybeans, water, OG whole wheat, sea salt, and aspergillus oryzae (koji).

As with most things that call for Bragg's/Nama Shoyu, you could also make it with sea salt instead. I would just add some water to it if that's what you plan to do. HTH!:D

I used a pinch of Celtic Sea Salt and it worked very well in place of the soy. Daughter is allergic to wheat and soy. Not sure if Bragg's has soy in it or not but I think it does. Or it has something she's allergic to.
