Here ya go:
No Bean Humus
2 medium zucchini
1/4 cup olive oil
4-8 garlic cloves
2 t celtic salt (or use dulse flakes)
1/2 cup lemon or lime juice
3/4 cup sesame seeds
3/4 cup tahini
1/4 t cayenne
1 t paprika
1 t ground cumin
Process zucchini, olive oil and garlic first in food processor. Add remaining ingredients and process until smooth

I second the recipe posted by Beckla. I made something almost exactly like this the other day - except no seseme seeds and I used a whole cup of homemade raw tahini (it is just blended sesame seeds) and I only used 1 garlic clove (my choice - dont like too much garlic) and my recipe didn't have any paprika or cayenne.
Mine turned out on the salty side because my tahini was salty but it is the closest thing to cooked hummus (it tastes very close to my fave cooked hummus - Cedars Hummus Tahini - nice and tangy!) I have ever made and I have tried several raw recipes!
It is surprising how much more like cooked chickpea hummus the raw zucchini hummus is than the sprouted chickpea hummus. :)

Agreed.
I've also made the recipe I posted with sunflower seeds when we didn't have sesame seeds... and I've added red pepper slices to it.

U mentioned u make your own tahini. Do u soak the sesame seeds first? Also i have a lot of shelled sesame seeds and I was wondering if i could use that. I have never eaten tahini or made or bought it so have no idea on what it should taste like. Thanks

I just made some for the first time a few days ago. I had a half bag of hulled sesame seeds and was wondering what to do with them. By itself, it is on the bitter side to me (but has some tang) so that is why I added salt to mine (I add to salt to almost everything though!:))
I didn't soak mine. They are pretty small so I don't know if soaking will make any difference. I don't know if it makes a difference in the taste either. What I would do is grind them first (either in a coffee grinder or in a blender - I have a good Blendtec which has a "Grind Grains" setting - perfect for grinding nuts and seeds) than do your blending and add water as needed. You shouldn't need to add any oils. You can if you want but it isn't really necessary.
You just blend on highest setting at 1 minute intervals, adding water as necessary (blender's sake mostly) and scrape the butter towards the blade in between blends. Keep doing this until it is as creamy as you want. :)
I added too much water to mine and it was on the liquidy side but it thicken up when I put it in the frig.
