I have really been wanting to make that mayo, but I guess I am wondering what all I can use it for? I'm sure there are lots of things and I am just having a mental block. Was looking for some ideas. Jicama fries is one option. What else?

On flax cracker then add tomato, onion & avocado.
I just made a Thousand Island Dressing using the mayo.
Mixed in with a avocado, a pinch of tumeric, salt and pepper for egg salad.
With the mock tuna or chicken salads.
Sliced bananas, cut up pieces of oranges (in a bowl) then add mayo for a fruit salad.

My fav is in slaws, especially sweet fresh marinated eggplant slaw. Also BLT's on either sweet onion bread or just as lettuce wraps!

Thanks for the suggestions. I love slaw! Marinated eggplant slaw, huh? That's a new one on me. I can somewhat imagine where you are going with that. I assume you julienne the eggplant or something?

Here is some before adding the mayo. I use a little mayo and some of the marinade from the eggplant bacon to made the best slaw ever! I just use mostly angel hair cabbage with a little shredded purple cabbage for color. I just crumble the eggplant bacon into the slaw or use the not sandwich shaped pieces.

Hi RVM~
I was wondering with your mayo recipe...does it have to be sunflower oil? I think I have every oil, but that one :o . It looks so nice and thick! Will it still come out the same if I used sesame or safflower oils?
The eggplant marinade looks awesome! I'll have to try it when they are done growing in my garden :)
Thanks for sharing again,
Mishka

Any oil will work, but the sunflower oil gives it a VERY special taste :D

RawVeganMom,
Oh my goodness this looks great. You've given me more ideas. I made a killer dessert today and will post at some point. I just am getting so excited over all the ideas. The problem is all this sampling isn't helping with the weight loss. Oh well I'm enjoying myself.
