Hello Everyone,

So I just got my Excalibur yesterday and can't move fast enough to whip up everything I want to make.

I was reading the booklet and it says under this section for raw food that you should put your dehydrator on at the highest temperature for the first two hours and then put it below 120 degrees. A leading raw food expert says the enzymes are still intact and it cuts the drying time in half.

As yet I haven't but wanted to know if others on this site do that?

I only do this when making something with sprouted grains (breads, etc.) or something that is thicker/taller than most items and will take longer to dry so that they don't sour/ferment in the dehydrator.

Other than that, I just keep it low.
