I've started reading Shazzie's blog (www.shazzie.com) to get some inspiration, and in her first week on raw she mentions making desserts using fruit, seeds and nuts.
So I ventured forth into my kitchen and lobbed the following (randomly I have to say, so I can't give exact measurements) into my Vitamix blender and the results are scrumptious!
I've christened it Blueberry Burple pudding (don't know why, just sounds good):
1 large-ish banana
blueberries (a goodly amount - maybe half a carton)
juice of half a lemon (added this last after tasting, as it needed an extra something!)
sunflower seeds (maybe 1/2 or 1/3 of a cup)
smaller amount of pumpkin seeds
6/7 pecan nuts (I'd run out of almonds, but you could probably use any nut like cashew / almonds)
4 small dried dates (I only had the small dates, but you'd only need 1 or 2 medjool dates)
good dash of nut milk to blend (could use just mineral water)
mmmm I'm loving it - really sweet and filling - I think it makes a meal on its own!
