I saw on the "what did you eat today" thread that you dehydrated eggplant cubes, then pureed them. I have been wondering if this would work to make like a baba ghanoush. Would you please share details about how you prepped the eggplant and how long you dehydrated etc...?

I bet you could! Maybe even soaking them in some salt water first (takes out the bitterness)...

Basic recipe for Baba-Ganouj

1 1/2 lb Eggplant
3 tb Lemon juice
1 ts Salt
2 ts Minced fresh garlic
3 tb Sesame tahini
1/4 c Chopped parsley
1/2 c Toasted pine nuts
2 tb Olive oil

I will try your recipe it sounds great.
I can always use more recipes for using eggplant.

What i had done was dehydrate my eggplant and had kept it that way for a couple of days not nowing what to do with it.
I then soaked it a little while in seasoned olive oil and blended it up, it turned into soft fine chunks and that when i blended the other ingredients and added them altogether.
I've never made baba ghanoush but i might look it up and try it sometimes.
The next time i dehdrate my eggplant i will add seasoned olive oil while i let it set for a couple of days. It increases the flavor.

Bethanie, did you soak the eggplant or season it before you put it in the dehydrator? Or did you just dice it and throw it in? Also how long did you dehydrate for? Were they completely dry?
