View Full Version : How do you all use cucumbers?

I've tried to make juice with them but it haven't turned out too well, so could someone give me some cucumber ideas?
I have tryed cucumber soup but didn't like it either:(

I adore cukes. Yummmm! I eat them like apples for starters. I also juice them and use the juice as a base in soups and smoothies. A great soup can be made from cucumber juice, avocado, garlic, lemon juice and salt blended. You can add other things too.

I cut them into rounds and use them as a biscuit replacement with dips also.

I will give your ideas a try today.
I usually end up throwing away soggy cucumbers because i can't think of anything to do with them but slice and eat them.

You're welcome. I don't like the juice on it's own either. That's why I use it with other things. It's nice with apple and pear juice as well.

If you drink green juice (green lemonade), an added cuke gives it a real "ahhhhh" feeling.

Grandma Marie's Swedish Cucumbers:
Peel and slice cucumbers (not wafer thin)
Thinly sliced white onion
Reshly ground black pepper to taste
Sea salt to taste
Place in tupperware bowl and in small bowl combine:
1/2 c apple cider vinigar
1/2 c water
1/8-1/4 c honey (start out with a few tablespoons & keep adding until it is a balanced misture of sweet to tart...not too sweet)
pour over cucumbers and onions, refrigerate until crisp.
YUMMMMM-O!

PS. No need to toss the sauce when they're gone, just add more cukes & onions.

This is a great recipe.
I will make this for dinner, no more ruined cucumbers and my husband will not have to say that i'm wasting money by throwing away spoiled food.

That is a delicious salad: We don't use black pepper but add fresh chopped fine dill. Yummers. Joz

I've tried them with carrot juice. I've done carrots with zucchini before too. Both were tasty.

Otherwise, I do a really yummy salad of roma tomatoes sliced thin like the cucumbers marinated in fresh finely chopped basil, sea salt and olive oil. Sometimes, I'll toss mushrooms or zucchini in too. Depends on my mood.

This sounded so great I just made it out of the three cukes I had sitting around needing a purpose! I can tell I'll like it already, thanks for sharing!

Oooh, I just made a dip...maybe its even from Alyssa's book I'll have to check but it was:
1 cuke
1/2c almonds (I used cashews)
1T oil
2T dill
1/2T herbamare
1T lemon juice (I used lime)

HOLY MOLEY! I could have eaten the whole thing with a spoon. So good. Passed the kid test too ;)

ooo, my mom used to make something like this when I was little but it was just the cukes in water and white vinegar and it would brine and be so nice and sour! I think I might do with with some apple cider vinegar. I didn't know this was a Swedish thing - makes sense since my mom is Swedish!

When I was little, I used to just eat the cucumbers right out of the garden and put salt on them. I would sit there and bite than salt than bite. I got all the cukes no one wanted in our house!

here is a really good recipe for Creamy Cucumber soup. I used an avocado instead of cashews since I didn't have any cashews at the time. I added some nutritional yeast to make it cheesy and it was really good!

Also, cukes are great with hummus. I use them for chip substitutes sometimes and make little cuke nachoes. (nacho cheeze, raw sour cream, olives, tomatoes, onion and peppers on top!)

I cut them up and eat them :)

I used to make them into spaghetti and marinate them with olive oil and apple cider vinegar, then I put them on a paper towel or a few to kind of soak up the extra. To me it made it an "asian" dish. Not that I ever ate much asian food in my life, but whatever right?

The absolute awesome-est way to eat cucumbers was originally a SAD appitizer, but i changed it to be RAW! slice cucumbers into quite thick rounds and arrange on a platter. Top with your choice of mushy stuff. originally it was dollops of cream cheese, smoked salmon and dill, so I have done a bunch to try... My favourite was topped with a dollop of guacamole and garnished with a slice of red, red chilli and a cilantro leaf. they looked so preeety and were guzzled down. Have a cocktail night with hubby, as these are cocktail food - make a couple of mock margaritas and sit down with a platter of these in candle light.

I don't much like them myself. My daughter likes to eat them sliced. And I sometimes make cups out of them. Cut them into big thick slices then hollow them out into cups using a melon baller. Fill with hummus, finely chopped green salad, nut cheese, or any of the mock things like mock chicken or mock tuna salad.
