Refrigerating dehydrated food question...

Hi All!

A question: When you dehydrate foods, do you place them in the frig? or keep them in a baggie? I guess it depends on what you're making, huh??? For example, I made Alissa's Rye Bread and the dehydrated cheese for the Rueben Sandwich and I was curious how long can you keep the cheese before it starts to go bad and should I refrigerate it?

Actually Alissa's Rye Bagels I've frozen. Even cheeses freeze well.
