I wanted to make something really quick with them so this is what i did:
I took a cup of sunflower seeds and 4 sundried tomatoes chopped up along with a 1/4th cup of olive oil and some fresh herbs, sage, and thyme and put these in my tiny blender and blended away until everything was crunchy but slightly smooth.
I placed a sliced in half lengthwise annaheim pepper on top of the large kale leaf and put in a bed of herbs on the pepper and layed in my filling on top of them and diced some ripe tomatoes on top of everything and folded the leaf over and ate. It would have been good with sliced avocado but i didn't have any on hand, next time i will use one.
My not completely raw husband loved it, it made him happy and it was so simple and tasty.
The sundried tomatoes gave it a great taste, it filled us up and the clean up was so easy to do:) .
