View Full Version : dried tomatoes - dehydrator?

I am having a hard time finding sun dried tomatoes, all the ones I come across are bottled in oil. I did find some "melissa's" dried tomatoes, and can use them.
But what I am really wondering is, if it is ok to dry my own tomatoes in the dehydrator? I will have a LARGE crop of tomatoes in about 3 to 4 weeks. I usually process them into canned tomatoes and juice. BUT now that I am doing RAW I am looking for alternatives. If I do dry them, how do I store them? Do they need to be stored in the frig or freezer, or can I just keep them in ziplocks in the cabinet?

I've kept mine in ziplock in the cabinet. Can't say how long they'll last like that though.

I just looked up recipes for sundried tomatos today. It said to use roma or plum and cut then 1/2-3/4 inch thick. Dry until leathery. Don't cut too thin or will stick to the mesh. You can brush with oil, but you don't have to. Can also sprinkle with salt or seasoning. It said to seal in a baggie then put the baggie in a jar and keep in the fridge for up to a year.
I bought heirloom sundried tomatos at the farmer's market...but I know they make their in a dehydrator. So instead of paying $6 for a bag, I think I'll make my own.

Yes, if anyone has any good tomato recipies, please share them. A friend just gave me two full bags of them. Mmm, mmm, mmm... so juicy good. Still, I can only eat so many plain or as pico de galo.

Alissa's marinara is wonderful and freezes well.
