I went to my local vegan raw resturant last night, La Vie. They have this AMAZING coconut pie with a light chocolate flavor, very sweet- but not sickning sweet. My boyfriend and I couldn't stop talking about how good it was!
The pie has a nut crust, one layer for a filling that is pretty firm (not runny), and topped with shreaded coconut. The watriess said it has brazil nuts and dates in the filling. Does anyone have any suggestions as to how I should try to mimic it? I am going grocery shopping today for the ingredients.
Thanks!

I'm afraid I don't have a recipe but right now I'm eating a slice of Ms. Lil's raw coconut cacao cream pie that I bought at Westerly Health Food Store in NY. I can tell you which ingredients she used.

Their coconut cream pie was one of the things that got me into raw foods :D I even asked the waitress, "this is raw? you mean, really raw? and vegan?" LOL
Sorry, totally useless comment :p

Okay, here's my tip- go to www.rawfoodmedia.com and check out the video for coconut banana cream pie. What you're looking for is the recipe for the coconut vanilla cream. Make that according to Melissa's recipe but add a tablespoon or two of cacao. There's also a recipe on that site for a pie (or cheesecake) crust. It looks pretty good. Put the two together and you've got it.
