View Full Version : Anyone had any luck with making some "cheesy" tasting soups?

I am having cheezy cravings lately - don't know why. Anyhow I was wanting to make a soup but I have been sort of disappointed in alot of raw soups I have made as they ended up having the same tastes. So, end up not eating alot of them.

I was hoping to come up with something with a cheesy salty taste and was thinking about using nutritional yeast which I have alot of.

Anyone have any good ones they came up with that had a nice mellow cheesy taste? (Oh, I already know about the broccoli one and I am not that fond of raw broccoli).

I was going to make a creamy cucumber soup and try adding some nutritional yeast to it to see if I could get a cheesy taste but I didn't want to ruin the whole soup and have it taste bleech! :D

Why don't you try sprinkling the NY on top instead of mixing in the whole soup? Then you might be able to tell how "cheesy" it is or isn't without ruining the whole soup.

Just an idea.

You could make something like Alissa's mozerella and instead of dehydrating it, keep it in liquid form and play with the flavors and other ingredients.... like... hrm... add tomatoes and something else for a .. uh... pizza soup??

I think I will try adding the Nutritional Yeast to my already made soup and than for next time time the Alissa Cheese Idea.

I have made the Swiss Cheese before and it was pretty good. :)

i second nutritional yeast...when i first tried it i was like "silly vegans this tastes nothing like cheese!" ... but now i guess im a silly vegan who thinks it tastes just like cheese :D

i use it on my salads and its yummy

I did add about a 1/2 tablespoon of nutritional yeast to my cuke/avocado soup today and it did taste quite cheesy! Made the soup much more yummy to me and I wolfed it down!

I was going to make some nacho cheesy sauce so I might just save a portion of that and add some water and miscellous other things to make it a "super cheesey soup".

Pardon, the question......I am relatively new to this world. I have been eating raw for awhile but have yet to make any "dishes". I don't know what nutritional yeast is. Do you get it at Whole Foods? What does it look like? Is it a powder? Is it like the yeast you use to make bread? Not that we make bread... LOL
I don't have a dehydrator and I can't make alot of nut based things because my dh is allergic to nuts. I'd love to find some very simple basic things to enhance my raw experience.

Hi Jeannie,

Yes, nutritional yeast is like a yellow colored flakey powder. And you should be able to get it at Whole Foods - look in the bulk section.

It is not the same as the yeast used to make bread.

Nutritional Yeast is technically not really raw but it is nice to use when you are transitioning into raw and are having cheesy cravings since it has a nice salty cheesy taste to it and has to be better than eating any dairy or vegan cheese subs!

have you seen those "cheddar" cauliflowers they're growing now? They're delicious. (LOL don't worry they're not GMO with a cheese gene added or something). I was thinking I would experiment with a cauliflower cheddar soup using one of those. The key to a decent cauliflower soup raw is that the cauliflower has to be just picked. A cauliflower that has sat in transit or in a store for a while makes awful soup IMO, so if you have a farm market nearby you might want to check out those cheddar cauliflowers.

I have never heard of these. Sounds interesting though. Is this something new?

I haven't seen anything like this at my co-op - May I ask where you live that you are able to get these?



Yesterday I made some "chedda sauce" - I use a combo of Alissa's Cheddar Cheese Recipe and another one. I basically did this the first time I made it becuase I didn't have all the necessary ingredients for either one so I kinda combined them. It turned out so well I always make it that way now.

1/2 cup pine nuts

1/2 sunflower seeds

(a few macadamia nuts I had use up -optional)

1 large red bell pepper (equals about Alissa's 1 1/2 cup)

1/2 lemon juiced

1 clove of garlic (I add less garlic than normally recommended in recipes because I don't like a strong garlic taste)

1 Tablespoon Nama Shoyu

2 Tablespoons Nutritional Yeast

Pinch of salt


I added this to my cuke/avo soup and it was a nice cheesy soup. I saved the rest for a nacho cheese sauce which I will add some jalapeno juice too.

that chedda sauce sounds good. I was thinking red pepper and nutritional yeast in the cauliflower cheddar soup too.

The cheddar cauliflowers I have seen at my local mainstream grocery store, at Whole Foods, and at the local Farm market I am nearby. My friend who has an amazing co-op garden also has them. My hubby put them in our veggie garden too. So they're everywhere round here (ontario Canada). I've seen seeds for them at various places including John Scheepers Kitchen Garden Seeds out of Connecticut. They seem to have hit the market last year. They actually tasted a little more cheddary to me and my hubby, maybe that's all psychological because they look that color, they're called cheddar, etc. Anyway, they're kind of purty!
