View Full Version : These Coconut Fudge Bars are REDONKULOUS!
I just made a recipe I found. I had pecans not walnuts, so I didn't even follow the recipe perfectly. My husband (who whines about the raw food sometimes and snips when I don't let him buy kit kat bars for the kids!) said he would never eat a commercial chocolate bar, ice cream or any other dessert again if I would just PLEASE make these regularly!!! And the kids flipped out!
We had them with strawberries...

I made these and my friend makes special trips to my work just to eat them! My non raw coworkers are eating them too!

oh, yeah! I make a cashew/carob version of those, but only in small batches...because however much I make is how much I'll EAT. :)
I never answered Smileen's question because I guess I missed the responses. Shame on me.
I have made these several times since July now. I still only make them with carob because I'm happy with it and it's less expensive. I also add sunflower seeds and cinnamon for the crunch and spice. I never have coconut water laying around, so I just put water and more coconut butter, and that cuts down on cost and complication. :D
I'm so glad to see some of you tried this. I think it's a real gem. :)

Which health food store? I have tried Whole Foods, Sprouts, Trader Joe's and Wild Oats with no success. They do have shredded coconut, but it is not raw.

Whole Foods will carry raw shreded coconut, but its pretty expensive(least where I am) and they rarely have it. What I did find there was dehydrated coconut, unsweetened(in the baking isle) It doesn't upset my stomach or feel cooked to me, so it works for me!

I made these last week. I used cacao instead of the carob, water instead of coconut water, and I too could not find raw coconut flakes so just got the unsweetened, dehydrated kind from the HFS. I think I'd have to dehydrate my own to feel confident about raw coconut.
Even with my modifications it was very good, almost like an almond joy...if you add an almond. LOL Anyhow, now I want to make them again. :rolleyes:

Yummmm!! I just made some!
This was first time using carob, it's ok, next time I'll try it with raw choc. and see if I can tell a big difference...
Walnutty: I am so sorry I just saw your question! I got them at a local HFS, so it's not a chain. They have lots of great stuff. Supposedly the coconut flakes were dehydrated at a low temp. I have pretty strong reactions to cooked food these days (of course it's been three weeks since I've even touched the stuff! Yay!)... but it was fine.
Pip: I'm sure you could use cacao. I just tend to use carob when it suits me fine. It's much less expensive, and I've gotten accustomed to it, although I didn't like it much at first.
Learning: That is a GREAT idea to use the cacao and add the almond for a change. I bet it's delicious! :)
AICgem: Yay! I get so excited about the raw treats when other people try them to. I've said this before (and this won't be the last time), it boggles my mind when stuff that is genuinely healthy is so tasty! It's like a miracle. ;)
I have gotten truly raw coconut flakes from differant on-line raw food stores. Some are more expensieve than others so I compare prices and shop around. The coconut flakes can be made smaller like shredded coconut. I really like the flavor and they a wonderful to add to raw cookies and such.:p

Making another batch tonight, has to be a double batch because I prefer raw chocolat, SAD hubby prefers carob!! I'll make whatever he likes raw!
