Hi guys,
What are all y'alls favorite recipes for summer? I went raw at the beginning of December and now that summer's bounties abound, I am in heaven! I'm eating up berries, peaches, plums, corn and heirloom tomatos plain like mad. But I thought it would be fun to use them in some recipes. I know I'm going to try Alissa's watermelon soup this weekend. Any ideas? Thanks!

Tomatoes and avocado slices on dehydrator flat bread or crackers...

Fresh - raw - corn on the cob. (SO sweet!!!)
and the summer soup I made up and posted on here with watermelon, peaches, etc.
Hard to go wrong in summer!

Hey Beckla - where can I find the recipe you posted? That reminds me of a peach soup I had years ago at a fancy restaurant. Mmm.

Hey, Cindy.
Here ya go:
Watermelon Gazpacho
2 C chopped watermelon
2 C chopped honeydew melon
1 C chopped papya
2 peaches, peeled then chopped
2 T dill (or to taste)
1 tsp. black pepper
Blend in food processor or blender til smooth, chill, and serve.
Garnish with a sprig of dill. It's almost like desert.

Nini's Garlicky Tomato Cucumber Salad
3 minced garlic cloves
1/4 c. olive oil
2 t. salt
Mix the salt and garlic together in a small bowl. I use a mortar & pestle and then put it in a larger bowl. Add the oil and blend.
Add:
6 tomatoes, large chunks (not small or diced)
4 cucumbers, peeled and cubed
1 sweet onion, cut in half, then quartered
Mix together. Marinate for an hour and then adjust the garlic, oil or salt to your taste.

I LOVE Alissa's watermelon soup from her book... I'm eating it right now. I make it a few times a week. Such a great mix of flavors and spice...

I agree with you Ama! I could literally LIVE off of that Watermelon Soup!!! I also LOVE Alissa's Flax Crackers with the almond butter/honey/banana combo and Corn Salid with Cilantro Dressing!!! SOOO Yummy!

Of course deserts: Alissa's Apricot Puff Pastries!! I just had a nice plate of those. :)
Also I second the green smoothies! I am in LOVE with them!
Hmm Alissa's corn chowder...
Then just fresh fruit, and enjoy! :)

A simple salad: romaine and or baby spinach, yellow bell pepper, tomato, green onion, celery, and sprouts
Any combination of fruit for a fruit salad.

MMMM Bella, nothing like fresh from the plant. I do this with cucumbers, tomatos, carrots, beans, strawberries, zucchini squash and yellow squash. anything that is ready to eat i eat it. Peas have been one of my main grazing veggie lately.
I do green smoothies daily. Drink at least two a day or try to.
I also love cole slaw with carrots, agave syrup, apple cider vinegar and some onions. I have a lot of beans and am going to include that in the cole slaw recipes. Prob put some yellow summer squash and some zucchini as they r taking us over. I need to go to the soup kitchen and get rid of some. They can always use them.

Me too. I eat a whole cuke a day and now my cherry tomatoes are coming in like crazy. YUMMERS.

To make this not chocolate, simply omit the cacao and cacao nibs.
I've made it then made a strawberry sauce (strawberries blended with a squirt of agave) or peach sauce. The possibilities are endless!
1. Cut Watermelon.
2. Eat.

I love banana ice cream. If I feel naughty I will make some banana bread to sandwich the ice cream between or make crapes to fill up with the ice cream.. oh gosh now im hungry

Just a simple cut up cuke and tomato with sea salt and pepper! Yummy!
