I've always loved yellow squash -- fried, baked, boiled, mashed, you name it. But it is *the most useful, flexible raw veggie." Raw as chips for various dips, as noodles, marinated, it's exquisite.

Good thing I planted a bunch this year.

Wow, so far I'm finding kale a little tough to eat raw, even marinated it seems pretty leathery. Or am I getting it confused with chard? How do you fix it?

I have been shocked at how much I enjoy raw yellow squash chips! I used to never touch the stuff, even cooked...till the last 8 months.
