You have to try this recipe - it is soooooo good!
COCONUT OIL FUDGE
1 1/2 cups coconut oil
1 1/2 cups honey
1 cup cocoa powder
1/2 teaspoon salt
1 teaspoon vanilla extract (optional, tastes fine without it)
Dump it all in the blender and mix till smooth. Pour it into a pan (I use a 9x13 glass pan) and let it set up. Depending on your climate and time of year you may need to refrigerate it if it's over 70 degrees or so in your kitchen. Cut into small pieces and try not to eat it all the first day!
When I first came across this recipe I was very skeptical so I only made half the recipe. When I poured it into the pan I tasted it and WOW! I immediately doubled it. This is incredibly easy and tastes like the finest cooked fudge. I use virgin coconut oil, raw honey (the thick chewy kind) organic cocoa powder and himalayan salt.
I've also made it with runny hunny (in smaller quantities) to use as a kind of sauce on top of fruit - scrumptious! :p
Thank you so much for this recipe! I have been looking for a recipe that calls for large amounts of raw coconut oil. I know how healthy it is, but I just hate the taste of it plain. I was trying to gag 3 tbsp of it down every day and just gave up. I'm going to try this recipe right NOW!
Well, I just made it. It's ok, in my opinion. I can really taste the icky coconut oil flavour though. The honey is also almost too sweet to me... I wonder if agave would be better? It's super rich and would definitely get rid of a sugar craving pretty quickly anyhow.

Why not add it to your green smoothies?

Do you already make cheesecake? There are variations of raw cheesecake with many including good amounts of coconut oil (like a whole cup for the pie). I try to have cheesecake available on a regular basis. Whenever I eat it (which I eat lots of slices in a day) it's like my body and metabolism becomes activated/turns on. I love what coconut oil does for me, but like you have a hard time swallowing it plain (even in liquid form). With cheesecake I get my coconut oil in me in such a delicious way!

That's exactly what I've been doing - adding it to my green smoothies. It is really rich and you don't fancy eating alot of it, but it adds the benefits of cocoa, coconut oil and honey to your smoothies a treat!:)

I made this fudge yesterday. I also didn't make much because I wasn't sure I would like it. I did though! But I can't eat more than a spoonful at a time. I think next time I will add a bit of mint and make it mint chocolate fudge!
Yummy! :)

Glad you liked it (can't take credit for the recipe tho as I got it from a friend who's doing my naturopathic nutrition course)! Sounds like a great idea to add mint too....mmmm. ;)

WOW!!!...
These are to LIVE for...omg..I can't wait to add some kind of nut butter to make it peanut butter coconut freaking awesome fudge...
I prefer to use agave instead of honey for vegan reasons...so I tried to add less so that it wouldn't be too runny...but then it wouldn't blend right...so does anyone have any ideas on how to keep it a thicker consistency but still use agave?

Ha ha, that's what I was like when I first tried it - soooo good! I've made it with runny honey which i guess is a similar consistency to agave, and found it was more of a fudge sauce consistency, which is great as a topping for fruit. Also I saw someone on this thread suggest earlier that you could freeze this kind of recipe - so why not try that? Then it would 'set' and be like solid fudge.
Let us know how you get on :p

Yes I did end up putting it in the freezer for a bit..but mainly just so that it would harden faster..which it did and now it's in the fridge.....but it ended up working out ok...it's pretty much the exact consistency of fudge:D ...YUMMY!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! !!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! !
