Hey everyone! I want to make fudge balls for the fourth of July so that I don't fall off track, but I don't know how long to soak the dates for :p ... Also do you all freeze them after you make them? If so how long lol?

I'm by no means an expert as I made the fudge balls for the first time yesterday.

I didn't soak the dates. They probably wouldn't have broken my food processor if I had now that I think about it. However, I did freeze mine as I have about an hour to travel to where I will be using them. I think they taste better when they aren't frozen. I also rolled mine in finely chopped almonds so they wouldn't be so sticky. I think they look prettier that way too.

Just guessing...I'd probably only soak them for an hour, but again, just guessing.

Soaking dates is moreso to make them softer and easier to blend and usually after an hour or so they should be ready to go. One trick I've learned too is to rinse them under hot water for a couple of minutes. But if the dates are already really soft, you don't have to soak them...mainly if they are hard or have been refrigerated and got hard from that.

I never keep fudge balls around long enough to have to freeze 'em...they don't last that long 'round here! :) But I do keep them stored in the fridge and we just eat them from the container in the fridge.

Mmmm sounds good :-p ... I left my dates in their container on the counter overnight so I believe they are pretty soft ... If not I will soak for a little while ... Thanks!
