View Full Version : Apricot recipes needed!

It's that time of year again... the apricots have invaded!

Our little tree that never grows more than 10-20 apricots has decided this year to give us over 300! And they're all ripening at once! I've pretty much been living off apricots for the last 3 days, but I feel my determination wavering...a girl can only eat so many apricots at a time :D

So I need your apricot recipes--cookies, bars, salads, dips, breads, ANYthing that uses a lot of apricots! And preferably something that'll keep for at least a few days. The equipment I have is a blender, a dehydrator, and a tiny little food processor (probably 2 cup capacity, not one of those super duper ones). So as long as it can be made with that, please send it on over!

Do you have Alissa’s book? The first recipe in her dessert chapter is Apricot Puff Pastry.

They are so good and so easy to make. It’s a macadamia nut cream that you stuff into a half of apricot.

They are delightful!!!! :D

What about just dehydrating some (let them get nice and ripe first), then vacuuming out the bags with a straw and put in freezer (to avoid molds since you won't be sulfuring). Then you can use them later in the year and spread out those great nutrients.

I've had a nice raw granola with buckwheat, raw cacao and dried apricots, some vanilla. It's been ages since I made it so I don't have a recipe, but if it appeals to you you could play around with that. It was just in the food processor, then some soaked whole buckwheat in at the end, then dehydrated until crispy.

rawdelight, thanks for the reminder, somehow I'd forgotten to check Alissa's book :o Those sound good, though I don't like macadamias but maybe I could use something else instead! And I'm definitely making some apricot jam.

exurb, that granola sounds delicious! I'm totally trying that one out, thanks!

Of course, I had to pick about 50 apricots today (and that barely made a dent!) so I'm gonna need a bunch more recipes :D

Try substituting the apricots for anything recipe that has dates. They are similar in texture...That would probably be really yummy.

Like a crust for fruit pie
apricot smoothie
apricot pudding
apricot salad dressing (yum)
apricot/pineapple/mago salsa

etc....

Oh my gosh... best idea ever!! I'm totally going to try an apricot pie crust. I'm kind of avoiding dates due to their high sugar content and GI, so I was wondering, what could I use as a substitute...? Meanwhile 100 apricots are sitting right in front of me :D GREAT idea, thank you!
