View Full Version : Noob Question about Potatoes and Beans

So potatoes and black beans are hard to eat raw. Any suggestions?

I've heard that up to a certain degree of cooking, they could still be considered raw.

I cut potatoes into sticks about 1/4 inch thick, soak them in a mixture of apple cider vinegar, salt, and water for about 30 minutes, then take them out of that and roll them around in a bowl of olive oil and salt, then blot them a little, then put them in the dehydrator at 105 degrees until they're nice and dehydrated. They get reeeeally small and dried out, but have great potatostickness, and are small and seasoned enough that the starchiness of the raw potato isn't a problem.

I also find that if you rinse the potato sticks off before you put them in the vinegar soak that it reduces the starchiness a lot.
