How do you get some veggies to be soft without cooking them. Not all the time I want to be crunching on my food all the time. Especially for collard greens and the white part of bok choy.

Generally people either marinate or dehydrate to get veggies softer. There are lots of marinades on the board (you can look for one using the "search" or "banana" at the top of the screen). Sometimes people do both: marinate and then dehydrate briefly.
