View Full Version : Kombucha Clarification

Got some free kombuchas locally and attempted my first batch. I have a few questions despite (or maybe because of ;-) visiting many web sites with instructions. Can any of you kombucha vets help me out?

I started with 4 or 5 mushrooms and a very small amount of starter from the "donor" - not enough to cover the mushrooms. I put one into each of two 2 quart jars with some of the starter, leaving the others in the original jar with even less. To the news ones, I added the brewed, sugared tea and some raw apple cider vinegar. Seems like raw apple cider vinegar is the wrong choice from what I've read, so...
1. Can I still drink the tea? It's brewed 10 days and seems to have the slight vinegary smell and taste, although I don't notice any carbonation.
2. Should I throw away what's formed on top? It's white and attached to the mom, but I read that with raw apple cider vinegar, it's not a baby.
3. Can I reuse the mushrooms from these batches with the apple cider vinegar?
4. I'm storing the ones not being deployed on the counter with cheesecloth cover. I'd assumed I'd add some more of this new batch since they have so little starter. Is that right?
