Does anyone know how long fruit leathers will keep, after dehydrating? And how they should be stored? Same question for apple chips?

I am looking forward to this fall, we have many many apple trees, I usually make apple sauce, juice, sugarfree pie filling etc. But if I am going to preserve them and stay raw, I can see I will be making fruit leathers, apple chips etc. The dehydrator will be running for days on end. But I am concerned as to how long these will keep. I am the only RAW one in the family, although I can see my DD eating up the leathers, and we all love apple chips. If the trees are prolific this year, I expect there will be enough of both to last us months!

I saw on television someone making fruit leathers out of hawthorn berries and he had some which he made three years ago. They still tasted very good.
