I made some raw Eggplant parm today. I marinated the eggplant and put it in the dehydrator. It is a bit rubbery though.

Is eggplant just a little rubbery or did I not leave it in the dehydrator long enough? Did I not marinate it long enough?

Eggplant is a funny veggie to work with. It's not real tasty raw but devine cooked.:(

I usually either sliced into rounds or shread and then put them in a huge bowl of water and lemon juice to marinate for at least 4 hours. Put something heavy to weigh them down below water line or else they will turn brown.

That might help with the rubbery texture.???

Did you peel it? I noticed the first time I made eggplant bacon the skin was almost impossible to take a regular bite out of without gnawing on it! Now I peel, slice, put in salted water for a couple of hours, marinate a few hours then dehydrate overnight and it turns out pretty good. Still a bit chewy though, oh well!

I just slice my eggplant on a mandolin on the thinest blade and keep the skin on it. Then I dehydrate overnight and it's usually crispy. Before putting it in the dehydrator I marinate it in this mixture someone posted awhile back for Egglplant Bacon that has agave, vinegar paprika, oil and a few other things for 2 hours and it comes out crispy. Usually I dehydrate at about 105.

No idea if this post will be done correctly as it's my 1st. I peeled & sliced an eggplant, and marinated it in olive oil, ume plum vinegar, freshly ground pepper, and honey, overnight. it's now in the dehydrater on teflex sheets at 130F. The instructions say to dehydrate a total of 24 hrs, but to take it off the teflex after 12 hrs. I'm wondering how that's going to work out with the olive oil (which does not seem to be diminishing at all). I'm not wanting it to drip down into my dehydrator & create a monumental mess. Any advice?

Put the teflex sheet on the tray under it.
