Need easy, portable sweet potato recipe

I'm trying to be more organised and plan to take lunch to work with me.

Can anyone suggest a savoury sweet potato recipe - other than a pie - that will transport well? I'm thinking of something that will go well with a salad.

Sweet potato "noodles" with you favorite pesto. I used to take something like this to school (no refrigerator) and it kept pretty well.

do you make the noodles the same way you would with zucchini or squash? with a spiralizer???

The last time I made it, I didn't have a spiralizer so I just used a peeler (like you use to peel potatoes or carrots). It would be much easier with a spiralizer though. I blended olive oil, basil, salt, and garlic in a food processor and mixed it in. It would probably be good with pine nuts too.
