Hi,
Does anyone have any good recipes using Butternut Squash as a main ingredient. Also are there any recipes for foods that grow in the fall and winter that people could also share, I'm trying to eat more in season this year.

ps. Also I was hoping to hear about more than Butternut squash soups.

You can substitute large, round, thinly sliced butternut squash in place of anything "rawvioli" type recipe. Do you have a food dehydrator? It seems to work best if you soften up the squash first, only for an hour or less. Keep testing just so that they aren't too soft (break in half) that you are unable to fold over into a ravioli. Or I suppose you don't have to fold over. you could cut little circles and/or squares and have the filling exposed...kinda like a smoores only better for you. OOOOh now that got me thinking of raw chocolate smoores.......hmmmmmm.
stuff it wih any "cheesey" filling you like...the squash not the smoore,lol!
you can make squash tacos, squash soup, squash chips, squash bread, squash spaghetti.....squash salsa, squash/mushroom/leek pie.......

I was wondering the same thing. I gave up and gave my butternut squash to my Aunt. Oh well.
