Hello everyone. I had the worlds most amazing salad the other day and decided I want to make it raw while I am on this journey to become 100%. It had an amazing tahini garlic dressing, but it had rice in it. I am wondering what I could use instead of rice that could be sort of soft and soak up some of the flavour of the dressing. I don't want anything too high maintenance tho. Thanks for the input! *drools a little thinking about making this salad a raw food wonder*

Some folks swear by pulse-chopped cauliflower...others, parsnips prepared the same way. To me, both have a kinda "strong" flavor and for me, are nothing like the rice I've always loved. So, you can try either and see how they work for you. Oh...one thing that you may try is sprouted barley. Alissa has a recipe for Spanish Rice that uses it so maybe it'll work in this salad!
