Well they are the best I've made so far. :rolleyes: Maybe not the best ever. :D

The BEST Carrot Cake Cookies

1.5 cups minced carrots (minced in the FP)
2 Heaping Tbls. honey or agave nectar
1 Tbls Almond Oil
cinnamon
nutmeg
salt
2 cups almond flour (left over from almond milk)
½ - 1 cup fresh apple or pineapple juice (I used both)
1 cup raisins
½ cup chopped walnuts

Mince the carrots until they are pretty tiny in a food processor then add the honey and/or agave, oil and 3-4 shakes each of cinnamon and nutmeg along with a dash or 2 of salt… pulse a few times to mix. Transfer this mixture to a large bowl and add the almond flour. Stir the two together (it will be dry). Then add about ¼ cup of juice and mix…keep adding a little juice at a time and mixing just until the dough begins to stick together. Fold in raisins and walnuts. Form (you may have to kind of squeeze them) into 1 ½ inch balls and then flatten. Place on mesh dehydrator sheet and dehydrate at 110˚ 8-10 hours or overnight.

Note: These are not the ones that I posted a picture of. These are "new and improved" :p

It sounds yummy! With my sweet tooth I would probably smother them in icing lol :D

I just remembered I put a Tbls of Almond Oil in the cookies too so I went back and revised it.

I didn't even know they make almond oil. I don't have that...can I use something else in place of the almond oil?
