I am currently sprouting varieties of wheat berries, chickpeas (for hummus), and mung beans. I sprouted more grains then my boyfriend and I can (or want!) to eat in a couple of days. All of the natural markets around here are out of raw tahini because of a recall and I have to wait a few more days or so untill I can make my hummus. I am rinsing 3 or so times a day and everything is growing like crazy. How long can I keep things things growing before they are bad? Does the refrigerator slow the growing process? I don't want to throw everything away because I am eating everything slowly and don't want to waste. Any advise?

Yes, rinse several times a day and refrigerate and you should be okay. Use within a few days however.

You can refrigerate to retard the growth, yes. They are cool in ziplock bags in the fridge afterwards, too, for almost a week. You can tell, like any other green, when they are past prime.

Good for you for sprouting! :-)
