I know uncooking with live foods that recipes might come out slightly different. I mean size does count in uncooking! lol. My problem is that when I make guacamole it has come out such an unattractive color. I am doing something wrong. I am either going to figure it out or quit making it. Does yours come out green like or brownish like mine. I am thinking that resturants are adding some green coloring because thiers is green everytime.

The avocado oxidizes and turns brown like a cut apple will. If you add some lemon juice it'll keep its' color.

Yeah, you need to hit it with lime juice (my preference) or lemon juice or ACV. Also, if you are putting it in blender or food processor, don't whip it up in there too long as that is just incorporating air in there helping speed up the oxidation process. Just long enough to get it smooth is the key.
I personally like lime in my guac and I will usually add the juice of a whole small lime per avocado. You need to hit it with the juice IMMEDIATELY to keep it as nice of a green as possible. I have had it keep for 3 or 4 days in the fridge when it has a stong amount of acid in it. With a regular amount it starts to discolor by the next day.

Good guac needs only a fork for mixing.

if you cut your avoes in lil pieces then mix less with a fork.
Guac should not be smooth ! It is a salad used as a dip or eaten plain.

Thats a new one for me!
If you need to store the guac make sure you put plastic wrap TOUCHING the top enough to get all air off the top and it will stay green
