Hi,
I have a book from a vegetarian restaurant and it has killer recipes. In the past I've used many before going raw. Anywho I'm thinking I can adapt some of them and here is one that looks interesting. I can figure out how to make it all raw except for the brown rice cakes, any ideas? :confused:

3/4 cup dried apricots
3/4 cup dried apple
4 brown rice cakes
1 cup of unsweetened coconut
1/2 cup of sunflower seeds
1/2 cup of pumpkin seeds
1/3 cup of sesame seeds
1/2 cup of rolled oats
1 1/4 cups of fruit sweetener (thinking honey or agave for this)
1/2 cup natural peanut butter, slightly warmed
1. In food processor, pulse apricots, apples and rice cakes to a fine texture. Transfer to a large bowl and set aside.
2. Next, pluse the coconut, seeds, and oats to roughly combine. Add to the fruit mixture, along with the fruit sweetener and peanut butter. Mix everything together until well combined. Cover and chill the dough for at least 1 hour.
3. Roll the dough into balls, approximately 2 oz (60 g). Roll the balls in toasted sesame seeds to coat, pressing them in slightly. Serve, or wrap in plastic and refrigerate.
