After I make the almond milk, I save the pulp for crackers, cookies, etc...
My question is, since I don't have a dehydrator yet, can I freeze the pulp to use at a later date?:D

Yes, that's what I did, and it will freeze pretty well. I used it in almond toast recipe. Although, before you freeze it you might want to make sure it's not frozen into a big lump, just for the reason it takes longer to thaw. I make it powdery before I freeze.
