Hi,
My neice is turning one very soon and my sister wants to make her a raw cake, anyone have any ideas that have been tested and are good?

This is a raw cake that I make:

2 cups almonds
2 cups dates
big bunch of bananas
2-4 cups of blueberries
1 bundt cake pan

In a food processor, crush the almonds and set aside.

Then put the dates in the food processor and blend until smooth and put in a bowl. Do the same with the bananas and the blueberries and put in separate bowls.

Then start layering:

almonds
dates
almonds
bananas
almonds
blueberries, etc.

End the top layer with a layer of dates or bananas.

Put in the freezer overnight (sometimes I only put it in for 2 hours because I can't resist waiting that long)

When it's ready, dip the pan in a little warm water & then turn over & let it slide onto a plate.

You can use as little or as much fruit as you want. I don't think almonds would be necessary. You could use all different types of nuts.

I would do strawberry cream. 1 year olds cannot bite too well into heavier nuts and stuff, imho. I'd do the bavarian vanilla cream and fresh strawberries in a big "pie". Divine.
